Mexican side dishes?

I've just made a tasty chili verde, but I didn't even plan on making sides to go with it. I'm storing it for later use, so suggestions would be useful and used.

I'm feeling so uncreative. All I can think of is beans and corn!

Hi, Mexican soups are good, I did a search for Gaspacho Soup and found a good recipe at this site:

I make a spanish rice recipe that is quite good using grated cauliflower in place of the rice. I sautee red onion and garlic in oil and then add the cauliflower and cook til kinda crunchy then I add a can of rotel tomatoes with green chilis and a sauce that I get at the store for spanish rice (i think it is by hatch) if you can't find it just use two cans of rotel tomatoes. then I add a large handful of shredded colby jack cheese and melt it into the rice mixture. It is really yummy~ I always kind of guess with the measurements because 1 head of cauliflower varies in sizes.

Living Low Carb has an incredible recipe for mexican squash and mushrooms. The simplest version of this (but not as good as her elaborate version) is to saute sliced mushrooms and sliced zuchinni in a little olive oil until they're just tender. Stir in some chopped up chipolte peppers to taste (use the canned chipoltes in adobo sauce--nearly all supermarkets carry them, and they add incredible flavor to tons of dishes. One pepper will probably be enough). Cover with a layer of sour cream and grated cheese, then broil until bubbly.
