Chocolate Mousse

I made this over the weekend for my hubby and my mom and dad (we all low carb). It was a major hit and SO easy!

Chocolate Mousse
2 cups heavy whipping cream
1 bar Guylian sugar free chocolate

Over medium heat in heavy saucepan, heat cream almost to boiling. Add chocolate bar, broken into small pieces, and stir constantly until melted. Pour into large bowl and chill, along with beaters, until WELL chilled. When cold, whip with hand held mixer (with chilled beaters) until thick and double in volume.

Pipe or spoon into serving dishes and rechill until set.

I added fresh raspberries but you could also top with fresh whipped cream or a spring of mint. Made four 1 cup servings.

Yummy!

I find them at Farm Fresh grocery stores in VA, but you can also get them online. They are, in my opinion, the BEST SF chocolate you can buy. Awesome for baking or just eating.

You certainly have a talent for creating wonderful low carb desserts. I have made your cheesecake many times. My whole family loves it.

It's a larger bar so probably the equivalent of 2 Delite or Atkins chocolate bars.

I made it!

I just finished Beachgirls Mouse and it was Goooood!!

I used 1 pint (2 cups I think) and one Carbolite Bar. I made it into 5 servings. I believe it came out to 2.8 carbs/serving.

Hannamom, what flavor carbolite bar did you use? My husband loves white chocolate and I plan to make this with the Delite white chocolate next time I find it.

I used the Chocolate Peanutbutter bar 1.75oz., it was the only one I had on hand. It didn't taste like peanut butter, just chocolate. It didn't completely dissolve until I whipped it.

Thanks again for the recipe. My husband and I really enjoyed it.

Here's a simple one I got from someone on this board. I apologize to whomever it was but I copy so many recipes.

Light Chocolate Mousse

2 cups heavy cream - well chilled
3 tablespoons cocoa powder
1 tablespoon Splenda
2 teaspoons vanilla

Whip the cream until it begins to become fluffy.
Add cocoa, Splenda, and vanilla and whip until the cream forms stiff peaks.
Do not overwhip.
Serve immediately or chill in the refrigerator.

Oh what the heck...here is a nice little fudge recipe. I have made it many many times.

Oh lord this sounds good! :-)

I find my Guylan (sp?) at Trader Joes. And I agree with BeachGirl -- these bars are the best I've ever had. YUM!
