How do I cook eggplant??? I ate eggplant parmesian(sp?) once and really liked it, so I bought an eggplant at the grocers and now I don't know what to do with it. Any suggestions?

Here are two ways to make it:

1. Skin the eggplant and cut into slices (about a 1/4 to a 1/2 inch think, in rounds). Dip the slices into an egg wash, and coat with grated parmesean cheese. Then fry in oil, turning to get both sides. I eat these with horseradish sauce, but you could make them with any sauce ..I don't particularly like tomato sauce or use it on this WOE.

2. Cube the skinned eggplant (medium dice) and fry up with some onions and oil until soft. Mix with some mayo and shredded cheeses (I think swiss and parmesean work best). Put in a small casserole and top with more shredded cheese and bake for 30-40 minutes. This dish works best if you mix in artichoke with the eggplant.

Both of these are pretty rich and not for everyday, but a good treat.

I just bumped a post by iknowican with a recipe by Dottie for eggplant parmesan. If you go to the bottom of your screen and do a search there are lots of eggplant recipes you might be interested in. Enjoy! I love eggplant.

The most important thing is to cook the eggplant until it's completely tender and soft all the way through. I have a moussaka recipe I'll post for you too.
