no soy bake mix anyone ??

I keep seeing tasty looking recipes that have a version of the Atkins bake mix, but it has soy. I can't eat soy. Does anyone have any good ideas on how to tweek the recipe for those of us not eating soy?

Atkins Bake Mix - No Soy

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup almond flour
1 cup vital wheat gluten
1 cup Designer Whey Natural protein powder
4 packets splenda
2 tablespoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Mix all together and store in a zip lock bag in the fridge. When a recpie calls for bake mix, just measure according to the recipe.

Yield: "3 cups"

1457 Calories; 66g Fat (39.3% calories from fat); 169g Protein; 60g Carbohydrate; 16g Dietary Fiber; 80mg Cholesterol; 4763mg Sodium.

Jazzy, the carb count seems high to me. I’ve found so many aberrations in the MasterCook calculations that I tend to do my own counts rather than try to fix each MasterCook ingredient…I calculate the carb counts, using product labels and the USDA site, as follow:

1 cup almond flour (8 net carbs)
1 cup vital wheat gluten (Bob’s Red Mill, 24 net carbs)
1 cup Designer Whey Natural protein powder (Optimum Nutrition 100% Whey Protein Powder, 8 carbs)
4 packets splenda (4 carbs)
2 tablespoons baking powder (Calumet, 1/8t=0carbs, I figure <1 carb/tsp for ~5 carbs)
1/2 teaspoon baking soda (0 carbs)
1/2 teaspoon salt (0 carbs)

Total net carbs 49 compared to 82 from MasterCook:

2256 Calories; 75g Fat (30.2% calories from fat); 290g Protein; 98g Carbohydrate; 16g Dietary Fiber; 296mg Cholesterol; 6081mg Sodium.

If you replace 1/2cup vital wheat gluten with 1/2cup WPI and the 8t equivalent sweetener with 5t xylitol or 12t erythritol, the total carbs could be 33 by my count… ;-) Am I missing something?

Thanks Jazzy and lowcarbman. This is what I'm looking for: A bake mix without soy that I can make myself (I hate paying high prices for the pre-mixed stuff). And, even better - I have all the ingredients on hand.

Locarbman: I usually do double check the ingredients that Mastercook uses as a default. And I've also had to go back and correct some custom ingredients as they were being measured as liquids if I didn't fill in both the weight and volume measurements. So you're right, my count is off (it was the protein powder and the vital wheat gluten). Thanks for pointing it out. I'll change the info above in the recipe . Less is a good thing!

I get 4g net carbs for the almond flour (8g if I put in Bob's Red Mill almond meal)

Vital wheat gluten - should be 24g. It comes up as 48 with Mastercook, so I'm going to edit that in the ingredients.

Designer whey natural protein: 5g for 1 cup. It was coming up as 20!

Splenda - 4g
Baking powder - 7g
Baking soda, salt - 0

So, I get a total of 44g net carbs (or 48 using the Bob's Red Mill almond meal).
