leftover chicken

Anyone have an idea of what I can do with a bowl of leftover chicken? Especially lunch ideas. Thanks, Stephanie

I posted this awhile ago in response to someone who was searching for ideas for store bought rotisserie chicken, but I would make the same suggestions here (did a search and dug this out of oblivion). Hope it helps, it's a pretty comprehensive list:

A couple of ideas...
- slice or cube and have over a salad - add shredded jack cheese, sour cream and salsa and voila - mexican
- slice, sautee up some onions and bell peppers and... fajitas
- cube and mix with a sauce of heavy cream, chicken stock, veggies, put in an oven proof crock and top with mock mashed potatoes (i.e. cauliflower - recipes on this board), broil or bake until crispy on top - sort of like a pot pie
- slice and top with marinara/tomato sauce and mozzarella - broil or bake until melted for chicken parmagiana
- slice and top with alfredo sauce and some parmesan cheese... chicken alfredo
- slice and sautee with a touch of butter, lemon juice and white wine...chicken piccata
- slice and sautee up a sauce of stewed tomatoes, sliced onion, mushroom, zucchini, and red wine (optional)... chicken cacciatore
- slice and sautee some sliced mushrooms, marinated artichokes, black olives and lemon juice... mediterranean chicken
- slice and top with creamed spinach (lots of recipes on here... I make mine with frozen spinach drained, heavy cream and shaved parmesan cheese - the real kind not the grated kind)... chicken florentine
- slice and top with ham and swiss (melted)... chicken cordon bleu
- cube and mix with broccoli and cheese sauce (try Ragu cheese sauce in a glass jar for convenience or make your own)... chicken and broccoli casserole
- shred and mix with a low carb barbeque sauce (there are recipes on this board or you can buy online or at a store)... pulled chicken barbeque
- slice and wrap in big lettuce leaves with bacon tomato and mayo... chicken club

Here is my "emergency" dinner:

1 C cooked chicken
1 Tbsp cream cheese, softened
1 tsp taco seasoning

Mix all together and top with 1/3-1/2 C colby jack cheese and microwave until cheese melts...or I like to stick mine in the oven to get the cheese brown and crispy.

Shred it and add Bruce's BBQ sauce! Cook a while longer to let the flavors meld.
