Simple Microwave Custard

This makes a large amount. You can cut it in half if you like. I like to cook extra for us and change it up during the week by adding things like unsweetened coconut, sliced stawberries on top, or even a little SF syrup or Jam on top...


Microwave Custard

6 beaten eggs
4 cup heavy whipping cream
1/2 cup splenda
1 Tb.vanilla


Beat eggs then add the cream and splenda, vanilla or whatever flavoring you like. Lemon and coconut are both good, so is a little nutmeg sprinkled on top of the vanilla one.

Here is another recipe if you are making it just for you. I eat this for breakfast sometimes.


Baked Custard

Cooking Time: 7-8 minutes
Temp: 50% power
Makes 1 serving

1/2 cup heavy cream
2 eggs
1 T Splenda (to taste)
Nutmeg

Beat eggs until light yellow in color in small serving dish. Add Splenda. Stir in cream and mix well. Sprinkle with nutmeg. Place in microwave and cook on 50% power for about 3 minutes and 34 seconds. Knife should come out clean when inserted near center of custard. Serve chilled, with sliced strawberries or cantelope on the side, if desired.

Variation: Stir 2 T sugar-free maple syrup into eggs before adding cream. Sprinkle with cinnamon instead of nutmeg.

One more custard variation that I LOVE (tweaked/stolen from an old DANDR book)

6 eggs
1 cup cream or half&half
1 cup davinci syrup flavor of choice (I always stick w/vanilla)
1 capful almond extract (optional, but it gives a wonderful flavor)
Nutmeg or cinnamon

Put all but nutmeg into blender; blend for about 15 seconds. Pour into baking dish or individual custard or coffee cups. Sprinkle with nutmen and/or cinnamon. Bake at 350 in a water bath for 45-60 minutes or until set.

I make this in 4 servings and eat it for breakfast with a cup of coffee and, occasionally, some sliced strawberries. YUM!!

OOps.. I did forget the cooking time, didn't I. I cook it for 15 minutes in my micro but since they all differ a little, I would try it for 10 and then add to see how long yours will take.

These all sound so good. I can't wait to try them. Thanks.

Figured the carb total for you:



Splenda...12g per 1/2 cup
eggs.......o.6...per egg=3.6
whipping cream..6.6 x 4==26.4

for a total of 42 carbs for the whole bowl

I make 8 servings out of it for a total of 5.2 per serving.

I made SHinOK's breakfast custard...It was to die for. I got
6 custard cups full..used 3/4 cup heavy cream and 1/4 cup of
water..with the vanilla DaVinci...just delicious..They cooked
in about 25-30 minutes in my cups...Thanks.
