Stuffed Strawberries

Stuffed Strawberries

4 oz. crean cheese
1/4 tsp vanilla
3 packets splenda
1 sf dark chocolate candy bar
1 lb (aprox 20) strawberries

Clean strawberries and cut stems off so the strawberry can stand on end. Cut from top to bottom (not totally thru though) in an X form. Microwave cream cheese 1 minute to soften add vanilla and splenda mix throughly. Pipe into the strawbery where you formed the X. Microwave the chocolate in a baggie for a minute or two depending on your microwave. When melted, cut the very corner tip off the baggie (cut just a pin hole size or the drizzle will be heavy)and drizzle over strawberries.

Carb count

20 large strawberries in Fit day are 25.27 carbs and 8.28 fiber = 16.99 carbs for all 20.
4 oz cream cheese from "Philly" package, 1 carb per oz= 4 carbs
3 pkgs Splenda= 3 carbs (probably less)
Atkins choc bar= 2 ECC carbs
vanilla=?

total carbs / 20= 1.30 carbs per strawberry

There is the problem you won't eat just one, PROMISE

Use EZ-Sweetz or any other 0-carb liquid sweetener and it's even less in the carb department.

Great minds think alike!!! I made these last weekend! I used lemon extract instead of vanilla and dipped in SF choc chips. They are simple and wonderful (but can look elegant)!
