Getting ready for the work week

I just HAVE to prepare stuff ahead so I will be able to easily stay on my eating plan. I love having delicious, quick choices when I pack meals during the week or reheat for my dinner. My fridge contains:

Roasted veggies; zucchini, summer squash, onion, mushroom, red pepper and asparagus
Asparagus, Swiss, hamburger and hot Italian sausage quiche
fat bombs salty almond butter and sweet almond butter and chocolate
1pound bacon
10 hard boiled eggs
low carb "lasagna" (ricotta topped with ground beef, hot sausage, LC tomato sauce and mozzarella. It's divine!
roast turkey breast taken off the bone

I do the same thing !

Big pot of chili
Boiled shrimp
jalapeno poppers
deviled eggs
roasted red onion,mushrooms,broccoli,brussel sprouts, and cherry tomatoes
tuna/boiled egg/mayo salad

will make more things tomorrow as our work week starts on Tues -
cooking for myself and DH for the week

Well, it's not really a recipe. I used approx 4oz of ground beef and ground hot sausage, browned up with onion. I put it in the bottom of a pie plate, added fresh, steamed asparagus that I cut in 1" pieces. I sprinkled on a handful of shredded Swiss cheese. Then I beat 8 eggs and put in approx. 1/4 cup heavy cream. Poured it all over the top of everything, sprinkled with Parmesan cheese and baked at 400 degrees for 30minutes.

Start Date: One day at a time
Starting an Atkins Induction tomorrow. I prepped bacon for breakfast and made egg salad for lunch. Snacks will be sharp cheddar cheese sticks and dill pickles. I stocked up the freezer with plenty of protein choices for dinner. I have lettuce and cucumbers in case I want a small salad with dinner, but I am going to try and stick to protein and fat as long as I can.

Here I go AGAIN.

ArdMaine- I make LC lasagna too. I make mine with layers of spinach instead of noodles. My favorite meal in fact. So good that it seems like I'm eating off plan.

Geez I would love to do this but I find that if I have all of these things cooked, I just eat it all... I know that sounds horrible, but if I cooked a lb of shrimp they'd be all gone.

anyone else like this?

I love doing that too! It's so nice to not have to cook mostly all week. I am doing an egg fast so I have, cream cheese pancakes, crepes, 'noodles' for fettuccine, caramel custards & caramel Machiatto cheese cakes. All recipes from I Breathe I'm Hungry and her egg fast. Makes it sooo easy to do!

Yesterday, I prepared:
-a pound of bacon
-cream cheese muffins
-raw walnuts (portioned into bags)
-extra sharp cheddar (portioned into bags)
-tuna salad
-sliced cucumbers

I need my breakfasts, lunches, and snacks for work to be ready to go in the mornings. I love being able to just grab what I need to eat during the day, so a little bit of prep time on Sunday afternoons is really valuable to me.
