Complete transition to fall menus

Cooler days, slow cooking, soups, stews. It must be fall!!! Before we know it, we will be talking low carb holiday goodies.

My matrix changes slightly due to the football schedules for Saturday, Sunday and Monday nights. Handy/pick up foods are good for these days. Putting my smoker to good use....on Sunday, we smoke proteins for three meals for during the week. Cuts time and planning in half
Menu Matrix for fall/football.....
Fall Menu Matrix

Sunday- beef/pork night with a salad or vegetable casserole maybe
Monday- burger/rib/wing "take ya pick" night (football), salad
Tuesday- seafood night
Wednesday- poultry (chicken/turkey thighs or breasts, ground turkey, etc) night
Thursday- meatless/salad/breakfast night
Friday- soup/salad night
Saturday- Surf/turf night

1 Wednesday pan roasted chicken breasts, sweet potato hash, steamed broccoli
Thursday vegetable frittata, roasted broccoli
Friday Mexican soup (either creamy poblano or a hominy stew) with "cornbread"
Saturday t bone, salmon, fried asparagus
Sunday smoked flank steak, broccoli/cauli casserole or salad

Monday pork ribs, sweet potato fries
Tuesday tilapia, shredded Brussels sprouts with bacon and blue cheese
8 Wednesday braised chicken thighs, green beans, chopped salad
Thursday omelets (with or without meat- sausage or bacon)
Friday minestrone, antipasti salad
Saturday ribeyes, salmon, Mexican squash casserole
Sunday BBQ pork stuffed sweet potato, broccoli

Monday beef burgers, edamame/quinoa salad
Tuesday baked fish (or fried) for poboys, salad
15 Wednesday turkey meatballs, zoodles, green beans
Thursday sweet potato hash (with various veggies), eggs, broccoli
Friday seafood gumbo
Saturday salmon, steak, salad, veggies "fries"
Sunday pork ribs, broccoli slaw (also smoke game hens, wings for Other nights)

Monday wings, black bean (soy) salsa
Tuesday grilled tilapia, bacon cabbage casserole
22 Wednesday smoked game hens, green bean/tomato salad
Thursday egg, bacon cheese stuffed sweet potato
Friday pork Mexican soup
Saturday grilled fish (snapper, tuna) cheesy cauliflower
Sunday smoked pork tenderloin (also smoke hamburgers, turkey thighs for later nights), sweet potato hash browns

Monday beef bacon cheese burger, salad
Tuesday shrimp/quinoa/black bean stuffed poblano peppers
29 Wednesday turkey thighs, spaghetti squash with marinara
Thursday cabbage casserole, green beans
Friday a chili (beef, turkey, veggie)

Have most of these proteins in freezer so hoping to avoid grocery for a while. Salad, bananas, milk, fresh produce, ration of Honeycrisp! Hope to go just once a week to shop. Scored salmon for half price on Saturday so shopped and bought four pounds. Should keep me happy for a while
