Dinner menus July 20-26
Sun: pork chops/fried cabbage in bacon fat
Mon: carne guisada/ salad/ avocado(sliced or cubed w/lime juice and cilantro)
Tues: cheeseburger patties/cucumber onion salad
Wed: pork ribs*/salad
Thurs: taco salad/avocado/salsa
Fri: bacon and eggs(may do an omelet or quiche)/sliced tomatoes
Sat: pulled pork(popularpaleo crockpot recipe)/cole slaw

*dry rub recipe I got off of here, but I don't remember the thread:
1 tablespoon fresh coarse ground black pepper
1 tablespoon paprika
2 tablespoons Splenda granular
1 1/2 teaspoons kosher salt
1 teaspoon dry mustard
1/2 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder

I could do that lol, but my DH and son would both divorce me I think. Some days that wouldn't be a bad thing :laugh:

Tomorrow I am going to do southwestern stuffed peppers in the crockpot. For some reason they turn out better than in the oven. The basic recipe is red bell peppers, cheddar/pepperjack cheese, quinoa and black beans (omnis can do ground beef and whatever starch they eat, if they do), tomato paste, lots of cumin and garlic, paprika, and onion. They smell so good while cooking. The peppers rest against the side of the insert and they get all caramelized and soft. yum

Looks like a tasty week, i need to try the fried cabbage i love it! But i have been making corn beef and cabbage and corn beef prices are through the roof right now.

I love corned beef, but the sodium doesn't love me back lol.
I usually buy several around St Patricks day because they're on sale.
