Another year to look forward to. Woo Hoo!!!
Here are my menus for the next two weeks. Gonna double down this month. Lots of good winter greens to hunt down- kale, cabbage, collards. We live near a family farm where we get bundles of greens I can barely get my arms around and each one only costs $1!!! Will be chopping and tossing those bad boys into soups, stew, pot roast...everything. Taste good and makes ya heathy too
Monday chili spaghetti (adding chopped spinach)
Tuesday roasted cauliflower soup with bacon
Wednesday out (here in Texas we eat black eyed peas and greens for good luck)
Thursday smoked pork/sweet potato hash, salad (adding smoky collard greens)
Friday shrimp bacon salad
Saturday shredded beef tacos with everything (adding greens with cubed sweet potatoes)
Sunday chicken broccoli Alfredo with spaghetti squash
Monday grilled fish, braised cabbage with bacon
Tuesday vegetable soup (all greens, all the time)
Wednesday eggs bacon, sweet potato hash browns
Thursday turkey burgers with carrot "fries" (add chopped cooked kale or spinach to burgers)
Friday cauliflower crust meatza (more chopped greens)
Saturday shrimp/steak, slow cooker green beans
Sunday hot sandwich night
Monday kale and sausage lasagna
