What did you cook, bake or make for the upcoming week?
I had DH, DD11 and myself in the kitchen.

We made egg,cheese and sausage muffins.

We made jalapeno poppers with bacon!

We made a big batch of coleslaw.

12 hardboiled eggs

Chicken salad

We also have a rotisserie chicken.

This should keep us on track all week. :jumpjoy:

Nothing yet, but I'm getting ready to put a pork roast in the oven to slow roast overnight. That and some braised greens will be most of my meals for the next several days. :)

I made breakfast casserole to have for the next 5 days.
eggs, sausage, pepperoni and gorgonzola cheese. Last Thursday I made a turkey and portioned that out and froze. Last weekend I cooked london broil, chicken and pork ribs portioned out and frozen. I am set with meat for a couple of months now. Also already have frozen veggies portioned out in the freezer as well.
I take 2 of my meals while at work so I bag them to be microwaveable, grab and go.

Glad you asked- as I was on a low carb cooking frenzy yesterday.
Wanted to have a bunch of yummy food on hand before the holiday goodies arrive to tempt me to stray :stars:

This is what I made:

-Creamy curried roasted cauli soup w chicken and toasted pumpkin seeds- will be lunch for the week
-Thai chicken pizza (prepped enough ingredients that I can make another one later this week for our traditional pre-Tday pizza party w visiting relatives)
-Sugar-free pudding cups (choc and butterscotch)
-Jello w cream
-Almond/pecan bark
-Peanut butter fudge
-Mixed berry almond butter muffins


Was a lot of work but this morning so pleased to see the fridge packed with yumminess. PLUS, I am hoping to convince my Mom, who will be visiting later in the week, to give low carb a try.
