Low Carb Dinner Menus
I know the Golden Years are always posting weekly menus, but thought it would be helpful for newbies and other to get some ideas of what we low-carbers eat. So I'd like to have people post dinner menus that you have tried and liked with whatever info you want to post about it.
Here's mine for this week starting Monday - Sunday (mostly LS recipes). I never use sugars or AS, and if I don't have something in the recipe, I leave it out.
Breaded chicken cutlets
broccoli salad - 1/2 head of chopped broccoli with 3 slices crisp bacon chopped, 4oz shredded gouda, and 3 tbs mayo stirred in.
Cheesy Chicken casserole
Hamburgers and Hotdogs (because it is my DH day to cook)
Gyro and greek salad
Pork roast - add radishes and green beans to crock pot with 2 cups water, seasonings, place roast on top. Cook on high for 2hrs, then low for six.

I tried this last week and it is downright delicious. Will definitely become part of my regular rotation! I used Bertolli garlic alfredo sauce (2 carbs).
Crockpot Alfredo Chicken
^^^^^^^^^^^^I could also see this being easy to modify for other tastes. i.e.... swap out the alfredo sauce for cheddar cheese sauce and use peppers n onions for a cheesy chicken dish with mexican flavor. Actually, maybe i'll try that next! :)

I haven't figured out how to post a pic in the post yet. I click the add picture but it asks for a link. I have the pics on my computer so don't know. I tried uploaded to the faces sight here and add that link, but it makes the picture tiny.
Lime Marinated Chicken Thighs
6 chicken thighs
1 pk of lime SF jello
1TBS soy sauce
season salt and pepper to taste
In a bowl mix the jello, water, soy sauce and seasoning together. Place thighs in a gal size baggy and fill with jello sauce. Shake bag well to cover all chicken. Marinate for 1 to 5 hours in refrigerator shaking bag every 15mins(the longer it marinates the stronger the lime flavor). At end of marinating, place chicken and sauce in a casserole dish. Bake at 425 for 40-45 mins. Turn oven to broil and broil chicken for 5-10mins until golden brown.
Fried Cauli "Rice"
1 head of cauliflower
1/4c soy sauce
1/2c diced onion
season salt and pepper to taste
Grate cauliflower into a large bowl. Heat up 2-4tbs oil enough to coat pan bottom. Crush garlic cloves and place in heated pan. Cook garlic for 5mins. Add in diced onion. Stir and cook until onion is slightly blackened on edges. Remove onion from pan and set aside. Place grated cauliflower in pan and cook for 15 min until tender but not mushy. Add back onion and garlic and cook together well. Pour in soy sauce and cook for another 5mins. Move cauliflower mix to side of pan and scramble eggs in pan and then mix thoroughly into cauliflower. Season to taste.
Sauteed Peppers, Mushrooms, Onions
In heated oiled pan add in 1 stick of butter and season salt and pepper. The add in diced or chopped veggie mix. Cook, stirring occasionally until veggies are slightly blackened on edges.
LOL...yes it probably would if you followed the recipe....It was supposed to say "At end of marinating, place chicken WITHOUT sauce in a casserole dish." not and. I use the jello versus the lime juice because it doesn't have that twang. When I tried to do it with lime juice It always had the lime twang.

A SUper Delish Low Carb New York Cheesecake. It is cooking right now and smells SO GOOD!
24 ounces cream cheese, set out to room temp.
2tsp Stevia toffee flavored liquid
5 eggs, set out to room temp.
2 teaspoons vanilla
16oz sour cream
Grease two deep dish 9" pans and set aside.
Beat the cream cheese on lowest setting for 5 mins. Add the Stevia and Vanilla flavoring and beat lightly. Add one egg at a time and beat lightly, repeat for all eggs one at a time. Next, add the sour cream and beat well.
Pour mix into pans. Bake at 325º (300º for dark, glass or nonstick pan) for 75 minutes. Start checking at 45 mins. If it's getting brown, turn the oven off. When the time is up, prop open the oven door, turn off oven and leave the cheesecake in the oven for another hour. After 1 hour, remove from the oven and allow to cool completely. Chill 12-24 hours before serving. The longer you can chill the firmer it will set.
Makes 12 nice sized slices. Top with fresh whipped whipping cream.
I will post pics when it is done.
Cooked a little to long - change cooking time to 50-55mins. It still tastes Great!, Just will look smoother if cooked less.
Turkey Kielbasa Marinara over Zucchini
1/2 cup sliced onion
1/2 cup sliced green bell pepper
1/2 cup sliced red bell pepper
1 tsp minced garlic
1 tsp olive oil
salt & pepper to taste
1 can Hunt's spaghetti sauce (I used garlic herb flavored)
14 oz. turkey kielbasa, sliced
2-3 large zucchini, halved and sliced
Grated parmesan cheese (in the can) and/or 2% Kraft Italian cheese blend
-Brown onion, peppers, and garlic in olive oil until cooked until onions are golden brown and translucent. Add the sliced turkey kielbasa and spaghetti sauce, bring to a boil, then reduce heat, cover, and simmer.
-Bring a pot of salted water to a boil. Add the sliced zucchini and cook until tender; drain.
-Spoon the spaghetti sauce over the cooked zucchini. Sprinkle with parmesan cheese and ENJOY!
It was a really colorful, mouthwatering dish! I wish I was allowed to share a photo of it.

We had Hannah's Chicken Special tonite and My Family ABSOLUTELY LOVED THIS!! My DD and I came up with the recipe. (will add pic later)
Makes 8 servings
31.41 fat/24.12protein/4ncarbs/388cals per serving
2cups shredded Italian cheese
1cup lc gravy
10 medium slices bacon
1 medium yellow squash
2 breast quarters chicken breast quarter large
1 stick butter
1/2 cup chopped celery
1 medium zucchini squash
Boil chicken until done. Chop into 1" pieces.
Cut up squash into slices; chop celery if not already chopped; slice butter.
In a large casserole dish, pour in LC Gravy. Layer half squash, half celery, and half of butter. Layer half chicken, cover with half cheese. Cover with Bacon. Repeat layers ending with cheese.
Bake at 425 for 30 mins.
Recipe for LC Gravy I created awhile back. I use it for everything, a mainstay, especially for salads instead of dressing.
1lb sausage ground or 1 lb bacon
2cups chicken broth
1cup whipping cream
2 tsp season salt
This looks like a dessert for Thanksgiving.
Not bitter at all and that is exactly what I used. Just remember to double the recipe if using two pie dishes or just use one dish for this recipe. Very good! My BIL loves cheesecake and said it was delish! I am thinking about incorporating peanut butter or chocolate into the recipe. Will work on that and see how it goes.
Thanks. I was also thinking about choc ganache on top with maybe some chopped pecans.
My kids have a favorite turtle cheesecake recipe I have made every xmas for years and I think your recipe would be the perfect substitute.
So today I tested out some low carb cookie recipes. Can you tell I am preparing for the holidays? They turned out super delish!
1 Carb Chocolate Cookie
Makes 18 cookies.
.72Fat/1.65Protein/.64Netcarb/15cals per cookie
8droppers of liquid stevia toffee flavored(2tsp)
2 oz or 1cup Hershey's unsweetened special dark cocoa powder
4 large egg whites, room temperature
1 tsp vanilla extract
2slices bacon crumbles to top (optional)
Preheat oven to 320F. Line baking sheets with parchment paper. fluff egg whites, stir in remaining ingredients.
Spoon the batter onto the prepared sheets in mounds of 1 tablespoon each. Press with fork.
Bake for 15 mins. Cool completely. Can be stored in airtight container for a few days.
Low Carb Peanut Butter Cookie
Makes 18 cookies.
7.78fat/4.13Protein/1.79 Net carbs/93cals per cookie
1 cup All Natural Peanut Butter (or any other low carb nut butter)
1 local free range egg
2 slices bacon crumbles to top (optional)
Preheat oven to 320. Combine all ingredients and stir well. Make small balls and place on tinfoiled cookie sheet. Press with fork. Bake for 20 mins.
hi mjgh06.....i see that you use Stevia for your cookies and cheesecake receipes, have you tried Splenda? Will it alter the taste if i use splenda instead of Stevia? i would love to try your receipes for the holiday. Thank you for any input.
Sorry Kew, I have not tried splenda, but I have heard it gives it a twang. You would also have to use a lot more of the splenda compared to stevia. If I remember it is 2 droppers stevia to a cup splenda.
