Meal ideas

What's your typical low carb menu?

Myself:

Breakfast - 2 scrambled eggs with cheese and bacon
Lunch - Chef salad with bacon bits and Italian dressing
Dinner - Baked chicken or fish with legal green veggies or steak

Snack: Pork rinds, unsalted peanuts or slim jims

Breakfast is usually coffee and cream or 1/2 and 1/2.

Lunch is usually left overs, or hard boiled eggs, nuts and yogurt.

Dinner is always a protein with one or two vegetables on the side. I love using the crock pot to cook larger cuts of beef. Usually lasts a few days.

Snack is usually nuts or a piece of cheese.

I'm thinking about cutting back on the nuts!

so many......

shredded mozarella in hot pan with pepperoni and other toppings then more cheese on top flip over and cook some more let cool and whala! pizza!

hamburgers with the bun made from eggs and cream cheese (so good) after baking and before using from fridge I microwave about 10 seconds to dry them more for a better bun-like consistency. can use sweetener in them before making then fill with cream cheese or butter mixed with Davinci flavorings or sweetener for a moon pie like concoction!

use mild cheddar cheese again in pan until melted and crisp - then remove and lay over a cup etc to get a taco like shell shape - fill with your taco goodies!

use the recipe rooms recipe for pork rind pancakes - sounds disgusting until i make them without telling people whats in it and they flip for them. really good flavor and texture. darker color like french toast though pancake taste

Sorry I was thrown by the title meal ideas and didnt see the request was actually for menu:

Br: egg, cheese and sausage LC muffin (2)
L: grilled fish, chicken or beef patty and small salad w/bacon & ranch
D: grilled meat and green beans, asparagus, veggie stir fry or another small salad with cheese bacon and ranch/ occasionally one of the special recipes listed in my other post or LC taco salad

if snack needed - usually sliced hard cheese or bacon

my breakfast usually is a mock danish MOCK DANISH - Linda's Low Carb Menus & Recipes or 3-4 bob evans sausage links sauteed in butter and canola oil, then dipped in sour cream/mustard.
Lunch is usually leftovers from dinner the night before.
Dinner...I have been rewriting some of my regular recipes into low carb recipes. So, been testing those out lately. So far, so good

Snacks...jello w/ whipped cream, pumpkin bake JODY'S PUMPKIN BAKE - Linda's Low Carb Menus & Recipes, or cheesecake A-1 Best Cheesecake - LowCarbFriends Recipes

I had to cut out my doz. or so eggs each week The yolks were causing joint pain. Went to 1 egg a week, Eggbeaters and added a few whites to my breakfast. Joints much better now.

Mix up my breakfasts now-- plain Greek yogurt with berries, smoothie with a protein powder, cottage cheese with peaches or apricots, oatmeal/chia/yogurt "hot cereal", eggbeater/egg white omelet with low sodium deli ham, cup of low carb milk

Lunches- about the same as breakfast but add oat bran to my smoothies to bulk up and help me get though afternoon.


Dinner- always 4-6 oz protein, a good sized salad, green beans, roasted root veggies, etc. Will eat sweet potatoes at least 2 times a month, same with pasta.

Don't do many snacks- hand full almonds, dark chocolate, half an apple, string cheese, gin. All the usual

B - Bacon/Cheese quiche from Linda Sue's recipe
L - romaine lettuce with boiled egg and 3-4tbs sausage gravy (homemade -fry sausage keeping the grease in pan and then add in 2cups beef broth and 1cup HwC and seasoning.)
S- differs nightly but always low carb and mostly from Linda Sue.
