April 2013 Dinner Menus
Better late than never! :)
I have been making these threads since June 2010 and as far as I know, all of the threads are still in this forum if you just go back far enough or search for them, you can find them.
Please share your weekly menus here, too, and post or ask for recipes related to your menus. We are no longer allowed to post links to recipes on outside websites, but if it's here on LCF, please link to it. You may also list the recipe title exactly and say it's from "such and such website", or "so and so's blog".

First half of April
I'm in Indigo and Violet weeks of my 8-week rotating menu plan that I shared in the March thread. So far, this plan is working out really well even with some minor adjustments in there. Here are my dinner menus for the first half of April.
MON: Artichoke spinach chicken bake (Taste of Home web)
WED: Taco bake (Taste of Home web)
THU: baked fish
FRI: Carne rellenos/artichokes
SAT: smoked sausage with cabbage and sauerkraut (Hillshire Farm web)
SUN: Grilled or baked pork chops
MON: Grilled Chicken Cordon Bleu (called "Mayonnaise Lover's Chicken on Taste of Home web)
WED: Paleo Sweet and Sour Meatballs (lateral eating blog)
THU: Grilled Steak
FRI: Shrimp Scampi
SAT: "Classic Favorite" ... not sure what yet.
SUN: Caramel Apple Pork chops
MON: Sweet and Sour Chicken (Taste of Home web)
Sides will be green beans or salad unless the recipe contains a lot of veggies on its own.
Remember, unless otherwise stated, I adjust these recipes to reduce carbs usually be substituting or omitting sugars and starches
This week is going to be nuts! :stars: BIL is getting married so for 3 days we will be gone.
Today-steak, potato, mixed veg
Wed April 10 - Reuben casserole
Thurs April 11 - pasta sauce, hamburger, spaghetti squash (pasta for hubby)
Fri April 12 - leftovers
Sat April 13 - leftovers
Sunday April 14 - Linda Sue's Tyler's Beef Stroganoff with cauli mash
Hi everyone, posters and lurkers alike. Sorry I haven't updated the thread lately, been so busy.
The second-half of April is as follows:
WED: Beef Chili (crock pot)
THU: Grilled steak/buttered green beans/cottage cheese with strawberries
FRI: Baked Tilapia/lemony radish salad/romaine and spinach salad with ranch
SAT: Orange Crispy Beef (from 15 spatulas blog)/and homemade fried rice (yes, real rice)
SUN: Baby Back Ribs with homemade sugar-free/low carb BBQ sauce/salad
MON: Chicken Fajitas
WED: Spinach Lasagna (Linda's recipe)
FRI: Baked fish of some kind/salad
SAT: Whole roast chicken/green beans
SUN: Sweet and sour pork with Asian stir fry veggies/rice
MON: Grilled Chicken/salad
Maybe in May I will plan some meals!
April just about flew right on by me! :p

W April 24 - garlic butter shrimp, asparagus
Th April 25 - sloppy joes, turnip fries (reg for hubby), veggies
F April 26 - leftovers
S April 27 - leftovers

W May 1 - haven't decided
Th May 2 - leftovers
F May 3 - S May 5 - will be away so eating out or at people's houses, will stan on plan but not sure what it will look like
M May 6 - chicken stirfry
Well, hello everyone! Have had quite a time lately. I was not able to finish my SNAP challenge for Lent. Got blindsided by my DGD's health issues- she will be 4 next month- and could not stay on plan. There is nothing terribly serious about her illness- she had a UTI infection and was placed on a low sodium diet. Had to change everything up for her and gave her nothing but fresh fruits, veg and juice. Low sodium cheese is $8 a lb and I started making her her very own bread. Yes, wreaked havoc on the budget. She is also off milk for a while just to see if it helps her in any way. They have since found a kidney has 2 outlets and one much larger than the other. On top of that we took her to Walt Disney World and I struggled to keep us all on some kind of plan. At Fantasyland we ate at Be Our Guest and it was great as we had our own chef- personally cooked her penne and fresh tomatoes, no salt-seasoned green beans, etc. very accommodating and much appreciated.
Here is our dinner menus for 2 weeks:
Starting April 29
Monday- Pork roast slow cooker with garlic apples thyme/ green beans or asparagus
Tuesday- spaghetti meatballs/ salad
Wednesday- Sicilian cod, Greek salad
Thursday- burgers, sweet tater fries
Friday- bacon wrapped jalapeņo shrimp, watermelon salad
Saturday- vegetable lasagna
Sunday- pulled pork, cole slaw
Monday- grilled fish, asparagus/tomato/feta salad
Tuesday- pork loin, green beans
Wednesday- turkey meatloaf, fauxtatoes
Thursday- bacon wrapped chicken, salad
Friday- grilled shrimp/ pasta
Saturday- flank steak, salad
Sunday- cook out- sausage, chicken, ribs,
Will be making a trip to our farmers market this week so the menu is subject to change. We love our veggies and that will dictate what our salads and main dishes may be.
its been forever but I wanted to pop in and get some ideas. Is there a May thread that I am missing?
Hi Wendy, nice to see you. I haven't been on in a while. I think after three years, I'm going to let someone else start these threads if they want to.
Reuben casserole sounds really good; I always enjoyed reubens in the sandwich form, though now avoiding most carbs, so we'll try it!
