Yes, for the first several weeks it was work, but there are so many good alternatives on the market, that after a while I did not even think about it

So far I'm doing it, but sometimes I just want to make a big old cheesy casserole

BUT I am so happy that my DD is not having horrible stomach pain anymore that it is worth it to keep on searching for great recipes. I also think that cutting back on the cheese is helping my weight loss along nicely.

Whoa I am really on it this week! Its only Friday and I have next week figured out!

M~turkey enchiladas, salad
T~meatball hoagies, going to see about a purple sweet potato to make chips

W~Turkey and dumplings, salad
TH~eggs and sausage or bacon
F~fish, couscous, mixed veg
S~ meatloaf, roasted broccoli
S~steak, sweet potato, green beans

Had to make changes, the turkey is not going to happen this weekend and since half the week is based on leftovers...

M~chili dog casserole, salad
T~meatball hoagies, going to see about a purple sweet potato to make chips
W~chicken and dumplings, salad
TH~eggs and sausage or bacon
F~fish, couscous, mixed veg
S~ meatloaf, roasted broccoli
S~steak, sweet potato, green beans

Salisbury steak, well this is how I made it. You can do it in a crock pot also, there are lots of recipies for it.

I used 4lbs of burger and added dried minced onion, onion powder, salt, pepper, beef bullion, worchestershire, and 2 eggs.

While mixing and forming the meat I cooked onion and mushroom in butter and a bit of oil till brown. Then added 2 packs of brown gravy mix and a little extra water than the directions called for so its more saucy. Take that out of the pan and fry your patties in it. After they are all fried (don't have to be cooked all the way through just nicely brown) stack them in the dutch oven and pour mix over the patties. Cover and cook in oven about a half hour.

Chicken Cordon Bleu casserole - this is what I made because i am lazy and its getting chopped up anyway

I did not use the rice in the bottom, did make it on the side for the rest of the fams. Also 2 cans or soup is overkill! Just use 1

My chicken cordon bleu is not the traditional rolled kind. The actual recipe is called "Mayonnaise Lover's Chicken" (don't let that name fool you) and it can be found over at Taste of Home's website.
