December 2012 Weekly Dinner Menus
Each week I pick out 6 things to make for dinner (one night is what we call FFY, or fend for yourself, night). This weekly menu becomes the base for the shopping list. Shopping is now on Tuesdays, so that's the start of my "menu week".
I start these menu threads every month so I have a record of what I fixed and to share to help others perform this sometimes tedious task. I have been doing this since June 2010 and as far as I know, all of the threads are still in this forum if you just go back far enough or search for them, you can find them. Please share your weekly menus here, too, and post or ask for recipes related to your menus. We are no longer allowed to post links to recipes on outside websites, but if it's here on LCF, please link to it. You may also list the recipe title exactly and say it's from "such and such website", or "so and so's blog". Here's what we were making last year at this time: December 2011 Weekly Dinner Menus @-@-@-@-@-@ OK, so I have to tack on a half-week to the first menu. Also, I had a few recipes I didn't get to the last couple weeks, so I'm recycling them this week and next. Dec. 1-3 SAT: Peppery Roast Beef (ToH)/Baked Artichokes with garlic dill sauce SUN: Orange Glazed Pork (ToH)/Stir Fry Veggies MON: Mayonnaise Lover's Chicken (ToH)/broccoli-cauliflower au gratin Dec. 4-10 TUE: FFY WED: Tacos (LC tortillas) THU: OUT FRI: Baked Salmon/Zucchini Chile Cheddar Mash (Linda) SAT: Sausage, Peppers & Onions SUN: Caramel Apple Pork Chops (ToH) MON: Creamy White Chili (ToH) Dec. 11-17 TUE: FFY WED: Whitecastle Hamburger Pie (Linda) THU: Carne Rellenos (from food dot com)/side??? Trying to get back on track...we had a baby Thanksgiving weekend, a sweet baby girl grandchild
I was cooking for DD and her DH and for a future SIL who had hernia surgery and my DH. Had soups, roasts and chickens going in pots and slow cookers and pressure cookers. Had to stop at one point in mid kitchen and figure out what was what Hoping to get back to normal and have only a lasagna to make by special request.Monday-lentil soup with smoked ham, trying my hand at some muffins made with almond flour Tuesday- pork tenderloin, massive yummy salad Wednesday- cod filet, green beans, salad Thursday-Baked Fauxtato soup (cauliflower, leeks, bacon, and using coconut milk as stand-in for cream) Friday- New Orleans BBQ shrimp, crispy baked avocado Saturday-OUT to party Sunday-OUT to party-taking guacamole Monday- Baked chicken, green beans, fauxtatoes Tuesday- Tortilla soup Wednesday- pork roast, apples, roasted sweet potato Thursday- making a big mess o' bolognese sauce to eat and freeze, spaghetti squash Friday- butternut squash soup, salad Ending here....a big week/weekend in store. Hi Jane, I have cooked some of Speck's dinners and yes I do believe when she types ToH she means Taste of Home Magazine. There use to be links but now they are not allowed so credit is given to the recipe so observers like us can look it up. I get tons of great ideas here. - Kristan
