June 2012 Weekly Dinner Menus

This is my two-year anniversary of making the dinner menu threads!

Each week I pick out 6 things to make for dinner (one night is what we call FFY, or fend for yourself, night). This weekly menu becomes the base for the shopping list. Shopping is usually on Sundays, so Monday starts my "menu week".
I start these menu threads every week and month so I have a record of what I fixed and to share to help others perform this sometimes tedious task. I have been doing this since June 2010 and as far as I know, all of the threads are still in this forum if you just go back far enough or search for them, you can find them.
Please share your weekly menus here, too, and post or ask for recipes related to your menus. We are no longer allowed to post links to recipes on outside websites, but if it's here on LCF, please link to it. You may also list the recipe title exactly and say it's from "such and such website", or "so and so's blog".

Oh so funny i found this thread! I just made a menu for the week and want to get back to doing this!

The whole family is not low carb so keep that in mind I also don't usually do dessert every day but trying to get more fruit in so trying it

Sun-grilled chicken, corn and black bean salsa, toss salad, brown rice, mixed berries
Mon- grilled steak, grilled onions, roasted potatoes, toss salad, mixed veg, lemon bars
Tue-shrimp tacos, corn and black bean salsa, refried beans and rice, fried plantanes
Wed-grilled brats, onion, 3 pepper salad, cole slaw, grilled peaches
Thurs-going out
Fri- roasting a full turkey I had in the freezer, sweet potatoes, loaded broccoli,poached pears
Sat-Meatloaf, spaghetti squash, carrots and dip, fruit salad

Here goes my Virgin Meal Plan



Monday: Vietnamese Noodle Free Bowl.
Bean Spouts, chopped lettuce, green onion, thin slivers of
cucumbers, chopped cilantro, shredded carrot, 1 tbs.
chopped peanuts. Fish sauce over all, and Vietnamese
hot sauce. Meat was marinated grilled pork. Yes it was so
good.

Tuesday: Deep fried fish. Batter was egg wash, pork flour blend,
(in food processor, plain pork rinds, onion powder, garlic
powder, coarse black pepper, dash of cayenne)
Dip fish in egg wash, then pork flour blend. Careful
not to overload the fish. (husband fishes and brings
home sea bass) We have a small Presto fryer. Works
great for two people. We had lemon wedges, homemade
tartar sauce, coleslaw with home made mayo.

Wednesday: Pork chops browned and slow cooked in mushroom soup
Each chop has a nice thick onion slice on top.
Green beans, left over cole slaw.

Sort of basic this week we are moving and not sure if I will even have dishes unpacked. So I am sure things might change, but I will try to stick to this menu best I can.

June 18 - 24

Monday - Pork Chops, mashed cauliflower, diced apple & potatoes, ceaser salad
Tuesday - Garlic chicken, rice balls, ceaser salad
Wednesday - Spaghetti & leftovers
Thursday - Roaster chicken, gravy, rice, bacon green beans(Linda's)
Friday - Pizza
Saturday - Asian pork stir fry, rice, salad, jello
Sunday - Tacos

Garlic Chicken:

1 Roaster chicken
1/2 onion sliced
1 tbsp olive oil
2 tsp salt
2 tsp paprika
1 tsp pepper
20-40 cloves of garlic

Place onions in bottom of crock pot. Place chicken on top. mix spices and oil to a paste and put on chicken. I crush the garlic with the flat side of a knife and put them all around the chicken. Just releases the garlic flavor. I also have used a lot less garlic cloves. Cook low 6-8 or high 3-4 or until done.

This is yummy, but does taste close to my Zesty chicken recipe. I am trying to find a different recipe to try as well. If you know of one, please post it

that is a ton of garlic! I don't have a really awesome crock-pot recipe for whole chicken. But I love to roast it simply covered in seasoned salt.

Thurs. 6/28: Monterey BBQ Chicken + Spicy Asian Cabbage (LS)
Fri. 6/29: Mexican Oopsie Bake + Cauliflower Pilaf
Sat. 6/30: Pizza

I didn't stick to 1/2 of my menu last 2 weeks. This is all mostly for my fam, not sure what my meal plan will be besides the UDs I have so guess I'm kind of winging my side of it.

Hey fellow planners. I just stumbled across a website that is going to simplify my whole planning process. It's called ZipList and is combines all the things I've been doing separately -- digital recipe clipping, meal planning, and shopping lists. Plus it syncs to my calendar and has a mobile app. I'm so excited and thought I'd share!
