Easter Dinner-Whatcha cookin?

Whats everyone cooking for Easter Dinner?

Im guessing a Ham for us.
and make my husband his regular fixins..

I will miss the tiny biscuits.. but im better off without them..

Losinit~Are you making any sides for yourself?

We're gonna bake a huge Ham, make Deviled Eggs, probably CauliSalad, and maybe some Cole Slaw.
I think that's it.

Hubby will love noshing on Ham Sandwiches the next day.

Oh yes i will make something for myself.. just looking for ideas... I have the book, will find something.. even maybe just a toss salad.. I love ham..lol
and eggs.. so i will be happy..

I live through what other people eat a lot! rofl

I am cooking this year, so that is always a plus! I am making a nice ham. I might pick up some splenda brown sugar to do a glaze on top. I am serving it with broccoli salad (one of my new faves) and macaroni and cheese (for my kids and dad). Deviled eggs a must in our house Appetizers~Smoked sausage and provolone tray. (My eldest son has also requested a "berry" tray~strawberries, blueberries and blackberries~for his eating pleasure) Dessert~I have found a few low carb cheesecake recipes on here, and am still deciding which one I want to make. I am also making Easter cupcakes (kids and dad again).

funny you asked. I saw that too and have now added that to the menu This is the one I use (Linda's low carb). Love it.


BROCCOLI CRUNCH SALAD
1 medium fresh broccoli, chopped, about 1 pound *
1/2 pound bacon
4 ounces cheddar cheese, shredded
1 cup mayonnaise
2 tablespoons vinegar
2 tablespoons granular Splenda or equivalent liquid Splenda *

Chop and fry the bacon until crisp; drain on paper towels. Blend the mayonnaise, vinegar and Splenda; combine all of the ingredients and chill before serving.

Makes about 6-8 servings
Do not freeze

* You can substitute a 16 ounce bag of thawed and drained frozen broccoli florets. The carb savings are negligible with liquid Splenda.

Per 1/6 Recipe: 581 Calories; 54g Fat; 19g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs
Per 1/8 Recipe: 436 Calories; 41g Fat; 14g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs



This is a slight variation of my Broccoli Salad. I'd seen so many similar salad recipes that contained cheese so I decided to give it a try. It's actually quite good. Click the photo to see a close-up.

VARIATION: Save on carbs and calories by using only half the dressing mixture. You could cut back even more by using less cheese and bacon. The counts below are for half the dressing, but the full amount of cheese and bacon.

Per 1/6 Recipe: 449 Calories; 40g Fat; 19g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs
Per 1/8 Recipe: 337 Calories; 30g Fat; 14g Protein; 4g Carbohydrate; 2g Dietary Fiber; 2g Net Carbs

Linda's recipe is the exact one that I use! For EAster though, I am omitting the cheese. It just adds a few extra carbs, and I really couldn't taste it in there. I have changed the menu just a little bit. I am still making ham, but decided to use a sugarfree jelly as a glaze instead. Going to find the one with the least carbs today when I shop. Still doing the broccoli salad, but have also decided to make green beans with bacon, too. (yes, mac n cheese for the kiddies and dad). I changed the smoked sausage and gouda tray to salami and cream cheese rollups. (Cheeper)

For lunch today we had Quorn Southern style burgers and green salad. Tonight we've got Gressingham duck legs with peas, organic carrots, leeks and Bisto reduced salt gravy. Defrosting in the fridge for the rest of the weekend are a couple of Canadian lobsters, a whole duck and a couple of Scottish salmon steaks. I may do soupe de poissons with fish pie mix, langoustines and a whole red gurnard but they're still in the freezer at the moment. OH has Tuesday off too as it's my birthday and we're eating out in a seafood restaurant on the coast
