April 2012 Weekly Dinner Menus
Each week I pick out 6 things to make for dinner (one night is what we call FFY, or fend for yourself, night). This weekly menu becomes the base for the shopping list. Shopping is usually on Sundays, so Monday starts my "menu week".
I start these menu threads every week and month so I have a record of what I fixed and to share to help others perform this sometimes tedious task. I have been doing this since June 2010 and as far as I know, all of the threads are still in this forum if you just go back far enough or search for them, you can find them. Please share your weekly menus here, too, and post or ask for recipes related to your menus. We are no longer allowed to post links to recipes on outside websites, but if it's here on LCF, please link to it. You may also list the recipe title exactly and say it's from "such and such website", or "so and so's blog". Here's what we were making last year at this time: April 2011 Weekly Dinner Menus ++++++++++ Week of April 2-8 Due to Spring Break and Easter next week, my menu isn't even worth posting. I'll post the following week's menu instead. Week of April 9-15 MON: Grilled chicken salad TUE: FFY WED: Ham steak and green beans THU: OUT FRI: Grilled steak and salad SAT: Indian Beef (from the PaleoLLAP blog); maybe try the quinoa I finally bought for the first time; sauteed spinach SUN: Baked fish and green beans |

Mon - Prime rib roast (1/2 off sale) with roasted asparagus
Tues - Fried chicken (breaded skin removed) with roasted cauliflower Wed - Turkey roast with stir fry veggies Thurs- Lasagna with slices of eggplant instead of pasta I will be out of town Fri, Sat, and Sun and will be dining out each meal. I am thankful there is always something low carb available. |

Most cookbook authors don't like you reprinting entire recipes, however, I think it's within copyright law to do so as long as you give them credit. On the other hand, I think we could just say "oh, it's just chicken breast sauteed with a few onions, garlic and green chilies in a cream sauce" (or whatever it is) and avoid the whole problem all together.
So, I've decided to move to a two week at a time schedule here and try to transition into OAMC if not for May, then for June. Since I've got so many menus posted and also on my iCalendar, it's become simple for me to put together two weeks (or more!). Add in my boring JUDDD rotation, and it's a no-brainer really. It's going to help with the family budget, too. DH gets paid every two weeks and we use his check for groceries, and often when we get to the second week, the money is gone. So if I get all the groceries bought before that can happen... |

Good idea posting 2 weeks at a time, I usually make them at least 2 weeks in advance (occasionally I get the urge to do the entire month)....makes it easier to do my grocery shopping that way. |
