Best Freezer Meals?

What are your favorite meals you like to cook ahead & freeze for busy nights/weeks?

This Sunday I'm going to grill burgers, chicken, and brats. And I'm planning on making Lindas White Castle pie. Looking for other ideas I'm also going to cut up veggies, cheese, etc. so that there is as few excuses as possible for me to get derailed This week has been awesome, byt week two always gets me!

Also, favorite go-to snacks, groceries, drinks, etc?
I have Crystal Light Appletini on my list thanks to someone here. Also, radishes!

I used to cook and freeze all the time but all my recipes were high carb so I have not done this since starting this WOE..
I would love to hear some ideas too!

Most of what I've done was cooking my meat ahead and freezing in the size I will use per meal. Hamburger, chicken, bacon, roast, etc. Really saves time.

Linda Sue's Stuffing Pie! All time favorite. Cook and freeze all the time.

I cook and freeze everything. I really like making soups and chili and freezing in individual servings.

We don't do the yummy LC casseroles because we tend to way over-eat those lovely dishes (and they're not zero carb...though low carb, those carbs add up if you eat the whole darn thing at one meal)

But to stock up...love to cook up 5 lbs gr. beef, seasoned with onions/garlic powder/salt/pepper...then freeze it in 1 lb. portions so we have quick meals ready to pull out of freezer...I cut up cucumbers, onions, tomatoes and we keep guacamole, sour cream, several varieties of lettuce, some salsa, and grated cheddar always on hand. So we can quickly make taco-salad. Or bacon-cheeseburger salad...or just a bowl of cooked burger & swiss cheese with a few mushrooms.

We also stock up on Tyson cooked grilled chicken strips (not the breaded kind, just grilled) Again, that's very easy to pull out a meal's worth and fancy it up with the swiss & mushrooms, or make chicken-fajita (minus the tortillas, of course)

I have zucchini lasagna froze in individual portions. I absolutely love my old high carb hash brown casserole. I reconfigured it by making my own cream of chicken and substituting cauliflower for the hash browns. I also have cabbage and sausage in the freezer. I generally portion out any recipe I make and freeze it as soon as it is cooled. If I don't, I will munch on it until its all gone.

Cooking ahead is the best way to avoid going off plan for me! Every Sunday, I've started making things like a London broil, a roasted chicken, hard boiled eggs, a pound of bacon and keeping it all in tupperware in the fridge.

I do love the lower carb casseroles, but I find that I can't stop at just one piece, thereby making it high carb for me!

I tend to stash the raw ingredients in my chest freezer and then cook from scratch once the stuff is defrosted. Other than low carb low fat vegetarian Quorn mince, pieces and burgers and Kelly's of Cornwall clotted cream ice cream (11g carbs for 2 scoops) I don't buy processed food.

If I make too much of anything we share it between the fridge and the labrador.
