eggs for breakfast, again??

While eggs are one of my favorite foods, they can get old.

I went for a Mexicana-themed egg this morning, and it was SO good, that I thought I'd share in the wealth.

Not that it's not an obvious, or even easily thing to pull together, but sometimes I find it's easy to forget all the ways you can dress things up and stay low carb.

Scrambled eggs w/ a little freshly ground pepper, topped with a little shredded cheddar, a half an avocado to one side, and the kicker – topped w/ a heated mix of salsa and cream cheese.

Yummy! If I do say so myself.

a slight twist

I actually made something similar, but added lime juice and it was amazing!

Fried eggs, squeeze fresh lime juice over them and top with salsa and a dollip of sour cream, with an avocado sliced to the side.

Yum!

I make something similar. It's onions, peppers, chorizo, Mexican cheese, eggs mixed w s and p plus splash of heavy cream ( whisked) and all scrambled together. Then top it with salsa. Yummy!

Just yesterday I saw a recipe on Lifehacker for egg baked in an avocado - definitely going to try it, topped with a little cheese and cilantro of course!

This was an OMG'er.

OMG. Looks good. (via Bake an Egg in an Avocado...

I used to think baked avocados were weird but they have grown on me. They seem to get MORE buttery as they bake. Before I cut out grains, I used to make caramelized onion and avocado quesadillas. Yum.
