Mr. Peanut Butter Bread French Toast!
![]() Had a nice peanutty taste to it. 3 slices Mr. Peanutbutter bread 1 egg couple drops Liq. Splenda (you could use whatever sweetener you like/have) shake of cinnamon about a tbs of cream (I don't usually measure precisely for things like this. LOL) Wisk it together and dip egg...fried in butter and a tad of olive oil to perfection. Butter to top with SF syrup. DH had 6 of them |

FABULOUS!Did they have a spongy eggy thing going on while hot? That is what I couldn't stand about Oopsie/Revolution Rolls-- when they are hot they are no longer bread-like and seem like an eggy sponge instead. Please Please Please tell me they were still bready!! *fingers crossed* |

It was fine Ang...not spongy, egg like, etc. It was a tad firmer than white bread for it, but hey...very few carbs here! Not a bad firmer. A good mean girl firmer
I have been wanting a toasted cheese for some time....that will be next!!! Also wondered about stuffing....thinking TG already. May try that on another loaf in the future. Don't want to do a turkey, but could do a chicken or stuffed steak.....the peanuttiness would probably work ok....what do you think? |

Breakfast:
3 egg scramble in butter w/ leftover steak, orange pepper, green onion, mushrooms, Trader Joe’s Double Roasted Salsa, Daisy Sour Cream (YUM) ![]() Lunch: Seriously. Also, the last of my Queso Fresco and a few celery stalks. Sometimes low carb eating is reeeeally weird. I ate it over the sink out of the tin like a bachelor trying to piss off his mom. It was just one of those days. I meant to make PootiSnacks (Sardines on Pork Rinds with yellow Mustard-- awesome. Totally awesome, amiright Pooti??) But the rinds were stale. yuck. ![]() Dinner: Enchilada Slop: Ground beef (from Costco frozen chubs) fried up with onions and garlic, El Pato enchilada sauce, La Victoria mild green chiles, Lindsay sliced black olives, shredded Bandon medium cheddar cheese, Daisy Sour Cream ![]() Here’s my favorite sauce—SUPER CHEAP (I think I paid $1.28) and the ingredient list is not an insult to my health. There’s actually food in that can. If you have these things in your cupboard, an onion, and meat from the freezer, you have a nice hot LC meal any ol’ time you need one. When I can afford more carbs I also add a can of corn, but for now, no corn. ![]() |

Used the Mr. PB Bread for a toasted cheese sandwich today. It was ok, but the pb taste overcame the cheese taste too much for me. It did not satisfy my toasty cheese craving. Hoping that is gone though. I used one piece to make a pb sandwich. Perfect! LOL Sent the rest of the loaf (enough for 4 more pieces) to DS to sample. He loves pb sandwiches and has not been able to eat them with his diabetes. Now, maybe he can have them from time to time.

Forget the food, the large pats of butter got me excited, oh butter, it is the best on everything!!! Like really, what cant you put it on?? Good on veggies, fruits, hot apple with butter and cinnamon, meat, butter and gorgonzola on steak, breads-delish, there is nothing that butter isn't good on, LOL
Misty- if you can ever get your hands on fresh churned like I get at the Amish Farmers market,OMG, I swear I could eat it off a spoon, or the Kerrygold I am a big fan of that, but it is a little pricey, Ang they sell it at Costco!!!!!!!!!!

Margarine is bad news, I mean I guess you gotta watch the butter consumption somewhat, LOL I know salted butter is good and my fav but I buy unsalted too, I would rather add my own to it! And hey if it makes you eat your veggies it is doing a good job!!!

I used ground beef, with Ortega seasoning( Will use home made lowcarb seasoning next time), Sharp shredded cheddar cheese, Jalapenos, Daisy Sour Cream, Taco Bell Jalapeno Creamy sauce (can be found in the Mexican aisle w/ salsa), Cilantro, wrapped in Green Leaf Lettuce. Note: Will not buy Green Leaf Lettuce for wraps way to flimsy, I ended up eating dinner with a fork. It was super delish, and I have plenty for leftovers. P.s. Glamazon your post is exactly what I needed to start my year off right. Thank you!! |

![]() This was left over dinner turned lunch sans green leaf lettuce. ![]() ![]() My husband surprised me tonight by making low carb Chicken Cordon Bleu. It is Chicken breast sliced in the middle leaving room to stuff 2 slices of Canadian bacon, cubes of Cracker Barrel sharp cheddar & CB jalapeno white cheddar, Inglehoffer Dijon Mustard, salt and pepper to taste. Stuff the chicken. Spray a deep skillet with olive oil add stuffed chicken to the pan and cover on Med. heat. Flip every 5 minutes until chicken is cooked. This chicken was huge and thick so it took 25-30 mins. The brown on the chicken is melted cheese that fell out. I did not wait like they recommend and I hand whipped the meringue. They came out a little flat but really yummy!
