Wow!!! An amazing thread! All the food looks wonderful, of course and I just have to say...I love your quirky plate collection. Where on earth do you find a "surgeon plate"?

Thanks, Hooligan! LOL, I'm surprised you could see what was under the food! Yep, one of them is indeed titled "Surgery." It's a set made about 10 years ago by 222 Fifth, called "Slice of Life." They are discontinued now, and I'm sick to death of looking at them, and I have accidently broken nearly all of them (I once had 16 big and 16 small (I think!), I'm down to 2 small and about 8 or 9 big! WAH!) Ah well, Every time I think I want to replace them I just can't do it. They are still cool!

Okay, everyone be prepared to see some pretty boring and ugly food. Eating Low Carb every day sometimes pops out meals that are exactly that: Boring or ugly. It happens. I need to go grocery shopping and am scraping the bottom of the barrel with some of these meals!

Breakfast:
5 eggs (dammit out of breakfast meats! Had to make up for the lack)

Lunch:
Can of Costco salmon, cottage cheese, mayo, lemon juice, dill weed, capers, green onion, diced celery, fresh parseley, walnuts

Dinner:
Costco frozen shrimp sautéed in butter, garlic, lemon, green onion, fresh parsley, fresh garlic
Costco organic Baby Kales sautéed in butter & garlic
Extra evoo drizzled on top
2 baby bel cheese (not shown)

From Jan 8:

Breakfast:
3 eggs, 2 slices bacon

Weird experiment #1: JICAMA HASH BROWNS
Grated Jicama, egg to hold them together
Result: tasted alright, sweet/salty which I liked, but a lot of work for a mediocre return. Perhaps if my frying skills were better I would have REALLY liked them. I am not a good deep oil fryer.

Weird Experiment #2: RUTABAGA HASH BROWNS
Grated Rutabaga, egg to hold them together
Results: NO. Took too long to cook, did not have a pleasant aroma. Perhaps it was my frying skills, but this one was just no good. Prefered the Jicama.

Lunch:
Can of Costco albacore tuna, cottage cheese, mayo, lemon juice, dill weed, capers, green onion, diced celery, fresh parseley, walnuts

Dinner:
LAZIEST. DINNER. EVER.
Avocado, can of Salmon with lemon juice, cracked pepper, black diamond salt

Your pics are such a delight. Sometimes I wish I could eat at your house instead of trying to get creative on my own.

A couple questions...Where do you get the yummy looking flavored salts? They sound so good. And I haven't found baby kale (any kale for that matter) at Costco. Do you get it in the fresh refrigerated section? I know all stores carry different items, so maybe I'm out of luck or it's out of season here.

Good morning, Zogo! Thank you! Come on over, I'll feed you! The salts were a gift set from a store called 'The Meadow" here in Portland. They also sell online, but are rather hoity toity and expensive, I'm sure a quick internet search will turn up cheaper options. I got hem for christmas and I have really been enjoying them! The kale was in the refrigerated section of Castco, I'm sorry you can't find them! Most grocery stores carry full grown kale, it just needs to be cooked/steamed a bit longer than the baby ones. Good luck, and thanks again!

Hey Ang,

How did you make your pics so big? I was so excited about taking my pics yesterday and it came out so small. I couldn't take a pic of my dinner last night I was in to much pain. But I plan on taking pics going forward. I'm totally thinking of doing what you did which is starting your own thread of pics. Very well done dear!

Thank you, Jean! I edit my photos in Photoshop, and size them to be 800 pixels wide. Then I store them on Photobucket and LCF pulls them from there. That's about it! If you start your own food thread, I AM SO THERE!!

Oh my goodness, glamazon. What a thread. Thank you for taking time to take pictures and to explain what's in each dish. And you're a Costco addict like me!

I edit in Photoshop and I make mine 800 pixels wide, too! And I use photobucket (still). I think people laugh at me for it.

My husband showed me a "quick" way for photo editing. Fix the levels and curves, resize, and you're done.

HA! And of course, after declaring that I am "800-pixel twinsies" with you, we see that they aren't all 800 pixels wide.

I must have uploaded a smaller version for some stupid reason.
