I did! But, those were pre-made (by me) and I just dumped them in the pan with the sauce, coconut cream and chicken. Heat and serve! It's the easiest meal ever. You can cook the onions until nice and brown, add the cauli until cooked up a bit, then add all the rest, saving the spinach for very last. All in one pan. The spinach wilts in about a minute, so you'll want to do that right before serving.

I just have to say your beautiful meal prep and pictures is motivating me to set a plan, shop the plan and enjoy the meal. Such whole foods that remind me a little about the KETO diet that is so good for you. High fat, low carbs.

Thanks, Meme! My best meals are the ones I pour out of a jar or can-- lol! I try to keep the meals pretty staight forward-- too much work will give me the opportunity to head for the drive-thru. I get food-lazy way too easily! This helps me a lot.

Your meals don't look like jar or can food. They look like fresh food. I quit all cans like mushroom, celery cream of chicken soup to make sauces and switched to real cream and butter or else I would take in too many carbs for nothing.

Pre-made salad w/ beef (okay, so I knew the avocados wouldn't fare so well. Note to self: no avocados pre-done. duh.) Also, orange coconut gelatin square (meh. needs tweaking to be tastier and have better texture.)



Dessert
orange vanilla cake made in ramekin using an "I Breath I'm Hungry" mug cake recipe as a starting point. (almond flour, coconut flour, egg, orange oil, Swerve, baking powder, salt, vanilla, butter-- and one with walnuts)
Very tasty! Still needs tweaking to be super delicious, but was fine for a random sweet tooth. Usually I like some orange zest in there but... no oranges in the house.
