I'm really glad you like them Mel! I'm fixin to be real bad and suggest some peanut butter, jelly, and maple syrup. Droooooooooooool. Or heck, just the peanut butter. I used to love waffles with peanut butter and syrup. Sweet and salty and oh yeah.

i love them...so much !!

i made some real thin ones like crepes and spread P/B and thin slices of banana atop..then rolled it up

took it GO

MsWoods...i just made my man a ham and cheese sandwich with your pancake as bread and he couldnt get over how good and filling it was..

holds the ingredients good and would take a bread craving away for sure

Just found your thread while browsing... love it !! Wish I had a costco nearby, will check at Sam's for fish and shrimp ... I need to eat more salads, but always find them boring,,,, you gave me lots of good ideas ! Will try to post some pics too, I'm a computer illiterate though.. we shall see !

The flaxmeal foccacia bread I made today is the bomb! Under 1 carb effective carb per piece. 12 pieces per loaf.



• 2 cups flax seed meal
• 1 Tablespoon baking powder
• 1 teaspoon salt
• 1-2 Tablespoons sugar equivalent from artificial sweetener
• 5 beaten eggs
• 1/2 cup water
• 1/3 cup oil
Preparation:
Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

1) Mix dry ingredients well -- a whisk works well.

2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.

3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)

4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).

5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.

6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.
Nutritional Information: Each of 12 servings has less than a gram of effective carbohydrate (.7 grams to be exact) plus 5 grams fiber, 6 grams protein, and 185 calories.

I had to resurrect this thread to show off a bit. I shared this lunch with my daughter so it's not strictly low carb though I stuck to eating only the meat and veggies.

I just restarted on Atkins yesterday. You don't know how helpful this will be in making meal plans!!! Thank you, Thank you, Thank you. Please keep it up. I found a recipe on Facebook for a wonderful chicken salad. I used one can of chunck white chicken, best foods mayo, 1/4 tsp of Splenda brown sugar and a sprinkle of McCormicks Perfect Pinch Seasoning and a dash of McCormick celery salt. (Dont like stringy celery so replaced it with this). It was delish. Would be a regular staple for lunch at work. Would be good with veggies or salad fixins. Thanks again for sharing. This post could be my saving grace and my motivator for food choices.

Here was lunch & it was sooo yummy !

A Joseph's lavash bread & inside uncured black forest ham (0 sugar), some quesadilla cheese, Duke's mayo & spicy mustard & the side is half a bag of reduced sodium Just the Cheese snacks. 503 calories, 9.7 net carbs.
