The ricotta shells are about 1/2 cup ricotta cheese and 4 eggs. Mix it all very well, I put a little garlic powder in them, and it makes about 8 shells. Don't grease the pan, put the batter in a very hot non stick pan and coat the bottom, like you would a crepe. Let it cook and get very brown so it doesn't tear when you try to flip it.

I would say it's about 2-3 tbsp of batter per "shell".

I used 1 Gortons garlic butter tilapia filet for both, a little shredded romaine (I didn't have cabbage), some sliced green onions, and the sirracha mayo (4tbsp light mayo, 1tbsp sirracha hot sauce for the base sauce, I didn't use that much obviously.)

Michelle- you like that frozen tilapia huh? I might have to look into that for something quick!

I wanted to say I see your profile pic was changed since I saw you last, and you look fabulous!!! DO you get stalled on LC? Man I have been so stagnating at the same weight up and down! It ticks me off!

I actually do like the frozen tilapia, and I really am not a seafood person at all. I like the garlic butter better than lemon pepper, but they are both good. And only 80calories per serving.

Thanks so much. The only reason I get stalled on LC is because I go off plan, or drink alcohol, so I don't really get stalled when I do what I'm supposed to.

The only reason I get stalled on LC is because I go off plan, or drink alcohol, so I don't really get stalled when I do what I'm supposed to.---

And that is my problem, the damn alcohol and off plan, LOL!! Well I figure I screwed around and wasted so much time not losing now maybe a good round of induction will kick something in for me!

Thank you so much Gail. That really means a lot to me. I know so many other's blogs are so much better, I just like super simple recipes that I can throw together.

Alrighty ladies. Last night's dinner. My reward for having such a kick butt performance in my body step class last night. I was so proud of myself.

Italian Shrimp Shiritake:




Ingredients:
2 small bags prepared shiritake noodles
1tbsp butter
1tbsp grated parmesan cheese
6 Kalamata olives, sliced
1/2 portobello mushroom, diced
20 medium shrimp, peeled and deviened
2tbsp kraft light sour cream
1/2 medium tomato, diced
1tbsp chopped white onion
salt, pepper, and red chili flakes

Cook everything together except sour cream, and add sour cream at the end to make a sauce. Garnish with salt, pepper, and chili flakes.

Counts for whole recipe:
401 calories/21.5g fat/13.87g carbs/3.8g fiber/10.07g net carbs

I know that seems like a high carb count for one meal, but I had plenty to spare yesterday. You could omit the onion/tomato/sour cream and the carbs would be 7.46g total. I just added them because I had plenty to spare.

Yum, Michelle. That Italian Shrimp Shiritake looks fantastic. We will try it this weekend! And I think you sell yourself short. Your recipe blog is chock full of really good, delicious recipes -- on par with George Stella, Dana Carpenter and other really great low carb chefs. You have talent and should be proud! Plus you are really helping those of us "foodies" who are always looking for fantastic low carb dishes to keep us inspired, satiated and motivated on this way of eating for life!

One of the things I plan to do while I recoup is go through the LC cookbooks and mark things to make, laying around I have to be really careful to eat LC and not too many calories so thankfully hubby likes to cook, so I can send him off to make stuff for me!

Alrighty guys. Got a new one.

Cheesy "rice" bake. Made with miracle rice. OMG so good.
Out of the oven.

Up Close

With my meal of a frozen cooked chicken breast patty/lc ketchup/jalapeno slices:


Ingredients:
2 bags rinsed Miracle Rice
1/2 cup Ragu Double Cheese sauce
1 large egg
6tbsp grated parmesan cheese
3tbsp "I can't believe it's not butter" (yeah yeah I know, i haven't used this stuff in 3 years, but I'm trying to reduce calories for a bit)
2tsp yellow mustard
2tsp franks hot sauce
1tsp garlic powder
1tsp salt
1tsp pepper

Put the rinsed rice in a dry hot pan and let the liquid cook out. Add garlic powder to rice and mix well. While the rice is drying out, in a bowl mix cheese sauce, mustard, hot sauce, egg, salt & pepper, and half the parmesan cheese. I used a small loaf pan to bake it in. Add half the rice in the baking dish, then half the cheese, then the rest of the rice and rest of the cheese. Mix everything very well. Add the "i can't believe it's not butter" in dabs across the top, and cover with the remaining parmesan cheese. Bake @350* for about 20 minutes.

Makes 4 pretty good size servings@
136 calories/11.76g fat/2.74g carbs/.2g fiber/2.55g net carbs

Or if you are hungry and want to use it as a main dish, you could get 2 huge servings@
272 calories/23.52g fat/5.48g carbs/.4g fiber/5.1g net carbs

This was an experiment, so I think I could leave out the egg and "I can't believe it's not butter" and it would come out the same. Reducing the calories to 84 per 4 servings and the carbs to 2.65g.

This thread is awesome!!!!

When I first started LC several years ago...I gave up after about 2 weeks b/c I could NOT cook. A girl can only have so much bacon and eggs. Now that I do cook and I am pretty good at it...I was nervous that I wouldn't find any good LC recipes. Well I am NO longer worried! Adding pics just makes it that much better!!

I am excited about my LC journey. Today is day 3 and I have already lost 4 pounds! I couldn't be more excited! Oh and I am not even doing induction. I am just keeping my carbs anywhere from 30 to 40g a day.

Oh margarine and spreads are the devil, I have to say it, butter rules, you know margarine is gray? They add all that coloring, it is nasty stuff!!! Here is an article about them one molecule away from plastic!!!

But other than that the rice looks good I was wondering how their rice was!

Pulled pork yum!!! Costco has a really good LC tortilla like 6 carbs I think but they are huge and taste really good!!!! I make chips with them sometimes.

That's it really. I get the tortillas at Sprouts..they are the Tumaro's brand. Love them!

Misty- do you do to Costco? They have plain pulled pork already cooked no sauce 0 carb, I about died and went to heaven!! Now Tony likes it hot, Bobby my son likes sweet sauce and I can just add hot sauce, this is ideal for after work! I think it was like 2 pounds for $10, they also had a 3 pound tub of ricotta for $2 that is crazy so I got 3 pounds of that to do something with!

I do go to Costco. I'm going to check that out. I bought one of those large pork loins a few months back during our big meat trip and just cut it up into small roasts.....and once it thawed in the fridge I didn't want it anymore..LOL I happened to have a jar of that salsa so I just threw them together in the crock to cook it.

I will add that to my list for our next big shopping trip. Thanks for the heads up!

Another thing to do with a pork roast is a jar of peppercini in the crockpot, just pork and the jar of peppers, sounds weird but it is not spicy but really good, my son hates spice but loves it, I think the vinegar mellows the meat or something!

Peppercini you can use either whole or sliced, I happened to have sliced, they sort of dissolve anyway so it doesnt matter, nothing fancy, throw in pork then the jar of peppers and turn on, and I am telling you it is amazing!

Yummy looking rice Sushi alternative, I wonder if I take it to our favorite place if they would make me rolls with it???
