Me too, I am trying to maintain through Christmas. Today is the big day I know if my oven gets fixed, so cross your fingers. If not thing will be creative on my menu for awhile until I can come up with the money to buy a new oven

I happen to have all those ingredients on hand for the chicken artichoke "casserole". I have had a bag of frozen artichokes from Trader Joe's in the freezer waiting to me used so this just might be it. Great idea Pam and Speck in adding in the extra veggies to bulk it up. I love casseroles.

Week of December 26-January 1

MON: Prime rib Christmas dinner for my parents who will be arriving today and stay through New Year's Day (roast prime rib, glazed carrots, petite green beans with parmesan, mushroom gravy and mashed potatoes (yes, actual potatoes), dreamfields mac n cheese, sugar free eggnog cheesecake with pecan crust
TUE: leftovers/FFY
WED: Grilled chicken and salad
THU: Ham/zucchini chile-cheddar mash
FRI: Grilled Steak and Salad
SAT: Out
SUN: it's traditional to have beans on New Year's Day, so I'll be using the leftover ham bone to make my Dad's favorite: Navy Bean Soup

Hi all, Lots of leftovers this week which I love and less cooking for me.

Week of December 26-January 1

Mon = Beef tip leftovers, Spinach salad w/blue cheese, green been w/bacon, rolls
Tues = Ham leftovers, broccoli & cauliflower Gratin, maple bread or leftover bread
Wed = Beef stoganoff w/leftovers, noodles, steamed cauliflower, salad, leftover bread
Thur = BLT's & BLT salads, side salad, canned fruit
Frid = Pizza & deep dish pizza
Sat = Spinah lasagna, Italian bread, jello, canned fruit
Sun = Beef barley stew (leftovers) dinner rolls, salad

Yep oven is fixed. It took them 1 week, but got it done right before Christmas. Now I need a new dishwasher. I swear everything is breaking in my house

New here & my menu

Hello,

I'm new here and have been reading the past few months of menus on here. Getting some great ideas! I usually make a menu on the weekends so I will try and post them here too. Here's my menu for this week:

Mon: Christmas dinner leftovers
Tue: I have "Laredo BBQ pot roast" currently cooking in my crockpot / mashed cauliflower Linda's Low Carb Menus & Recipes
Wed: Boneless pork chops coated in ground pork rinds/parmesan mixture with green beans in bacon bits
Thu: Chicken breast stuffed with ham and boursin cheese with brussel sprouts in cheese sauce
Fri: Chicken wings, vegies & homemade Ranch, deviled eggs

Hope the link works, not sure if I did it right. The recipe is from Linda's Low Carb Menus site.

Good looking menu. I have cruised Linda's recipes many times over, and that Laredo beef (link worked fine, by the way) looks awesome! I am going to have to try that soon.

Hi again,
We had the Laredo BBQ roast last night and it was very tasty. Although my family likes their BBQ sauce sweeter than this one came out to be. So after I pulled my portion out, I added some brown sugar to the sauce for them. The only other thing I added as some cayenne pepper to give it some zip. Definitely going to make this one again.

Morning,

Already change a few days from last night. Made a ham yesterday and thought I would have tons left. NO......these teen boys are eating me out of the house. Anyway, trying to keep the budget in line after Christmas.

Week of January 2-January 8

Mon = Pot roast, diced potatoes, maple bread, caeser salad
Tues = Beef & gravy,rice, homemade dinner rolls, side salad
Wed = Ham & noodle casserole(kids), Creamy ham & potato casserole (Linda's), steamed cauliflower, homemade dinner rolls
Thur = Spaghetti, leftover pot roast, side salad, canned fruit
Frid = Pizza & deep dish pizza
Sat = Taco, taco salads, refried beans
