September 2011 Weekly Dinner Menus
Each week I pick out 6 things to make for dinner (one night is what we call FFY, or fend for yourself, night). This weekly menu becomes the base for the shopping list. Shopping is usually on Sundays, so Monday starts my "menu week".
I start these menu threads every week and month so I have a record of what I fixed and to share to help others perform this sometimes tedious task. Whenever possible, I link to the recipes I use if they are posted online. A lot of the time, the recipes I use are not low carb on their own, so let it be known that any recipe I use is adapted to the LC and SF style. Week of September 5-11
MON: Jalapeno (and regular) burgers/ green bean salad
TUE: FFY WED: Grilled chicken over salad greens THU: Chili & hot dogs FRI: grilled steak/zucchini-cheese casserole SAT: Taco Lasagna (no beans a w/ lc tortillas) SUN: Whole roasted chicken/green salad --- On a side note, I spent 3 solid hours in the kitchen yesterday making lunch items for the coming week. I have NO idea how "whipping up" some tuna and chicken salad, deviled eggs, baking up 2 pounds of bacon, making omelet cups and tuna muffins, and chopping veggie dippers took 3 freaking hours, but it did. I decided to make all this stuff because there seems to be "nothing to eat for lunch" for DH and I. DH will often come home on his lunch breaks and end up just cutting off a hunk of cheddar and calling it good. We have tons of ingredients, I just needed to make them into grab-and-go lunch food (and some bfast as well). Today, I need to bake off some chicken wings (both buffalo and Asian inspired marinade) and grill some steak and chicken breast strips I set to marinate overnight, and bake some almond thins and cinnamon almond flour muffins. Tomorrow, I'll make some dips -- buffalo chicken, pizza and spinach. Whew. I don't want to hear "there's nothing to eat for lunch" again, nor worry about my poor DH working so hard out there in the heat only fueling himself with a measly hunk of cheese or slice of lunch meat. |

![]() Kare - I am very curious about the turnips.... I wanna start sneaking them in but I wonder about the taste. Are they bitter? I am gonna sneak cauliflower in a ham and cheese casserole this week and hopefully that will fly. Tues (9/20): Fiesta Ranch & Parmesan Crusted Chicken + Garlic Riced Cauliflower Wed (9/21): Blue Cheese & Mushroom Topped Sirloin Steaks + Bacon Wrapped Asparagus Thurs (9/22): Mexican Spinach Lasagna + Oopsies Fri (9/23): Crispy Mexican Chicken Melts + Spanish "Rice" (Cauliflower) Sat (9/24): Steak Melts (using Steak Ums) on Oopsie Rolls + Green Beans A La Carbonara (Dana Carpender's) Sun (9/25): Pork Kabobs (totally winging this) + Broccoli Dijon Speck: Sorry you're food went to waste...my DH decided to eat about 5 bags of pepperoni I had in the fridge this week as late night snacks and has now realized I was not kidding when I told him to cut down on that and the cheese sticks. He hasn't weighed in for 3 weeks but did so yesterday and saw that he had not lost at all since then ...maybe his DW is right... Guess I better make some deviled eggs for him this week and maybe some stuffed mushrooms. Thanks Luca & Wendalina. ![]() Wendalina: The turnips definitely are not 100% fry like, but I like the taste of them, kind of sweet too, but I dip them in ketchup like french fries. If I had a deep fryer I would attempt to fry them in there and see how they are like that....someday. I tried the celery root as fries once and did not care for them AT ALL. Don't think I will ever find a decent fry sub but these are okay for now. |

Can I play? Sounds like I share the same family organization plan for meals as Speck. The only thing maybe different is I check the ads prior to making my menu so I can try to utilize the sales to my advantage. I love to cook and I am always trying new recipes. I also bake one treat a week for the family and generally bake our own bread.

Thanks! I bought the book Artisan Bread in Five Minutes A Day. You make a wetter bread dough at the beginning of the week and then use it all week. I am slowly making my way through that book. Generally I make a simply white bread for lunch sammys. My boys like it and I know what is in it. Do we have to post links or can I just put the titles I use off of food (my soon to be old fav recipe site after checking out all of yours)?

You can just post titles if you'd like. I just post it with a link because people always end up asking for the recipe anyway, so it saves time in the long run.

Uhoh....if this is a strict low carb menu I'm in trouble. I cook whole foods mostly, limiting processed and sodium. Because of other issues I eat so little I don't have to watch my carbs. My boys just won't. I guess I don't follow a plan per se. Well...my plan but I doubt anybody would be losing on it without portion control and exercise.

Not at all, there are SO many different plans people are following around here...plus, this helps a lot with accountability. By posting your menus, you could be helping lots of different people here.

Mini Vanilla Scones Like Starbucks) Recipe - Food.com - 201719 Monday: Tator tot hot dish & watermelon feta salad Tuesday: beef enchiladas, cheese enchiladas with homeade sauce and tortillas, pinto beans. It's Taco Tuesday but I am taking creative license. Leftover beef needs used. I have sauce I made needing used. I have fresh handmade tortillas and they sound good. Wednesday: Lime Cilantro Salmon Broiled Salmon With Cilantro And Lime Recipe - Food.com - 15911, grilled sweet corn, rice cooker rice pilaf and cantaloupe Thursday: Brined BBQ chicken (extra for chicken salad lunches), calabacitas and apple pecan spinach salad Friday: Friday Night Football and $10 ribeyes at the local bar before the game! Saturday:make your own pizza

Hello...I am 47, married, 2 teenagers and 5 ft 2 with 20 lbs to lose. I am a carb and sugar addict and really want to commit to low carb...I like how I feel when I am consistent with it. I also need structure...gonna try and follow some of your menus ladies...hope you don't mind.
