June 2011 Weekly Dinner Menus

Hard to believe I've been doing these threads for a year!

Each week I pick out 6 things to make for dinner (one night is what we call FFY, or fend for yourself, night). This weekly menu becomes the base for the shopping list. Shopping is usually on Sundays, so Monday starts my "menu week".
I start these menu threads every week and month so I have a record of what I fixed and to share to help others perform this sometimes tedious task. Whenever possible, I link to the recipes I use if they are posted online. A lot of the time, the recipes I use are not low carb on their own, so let it be known that any recipe I use is adapted to the LC and SF style.
Please share your weekly menus here, too, and ask for recipes.

Happy Memorial Day everyone and thank you to those who have or still are serving our country!

This week, it's all about the GRILL, baby!
Mon- Steak
Tues- Turkey Burgers
Wed- Chicken thighs
Thurs- Maybe some more tuna muffins (They were wonderful!!!!)
Fri- LindaSue's chicken parm pie
Weekend- Leftovers/go out

Lots of salad and grilled or roasted veggies for sides (it keeps it simple, and they are easy)

Not many people post, but it makes me happy to see 3 and 4 thousand hits on the threads every month, so I know we are helping inspire people. I used to dread, absolutely dread, doing the menu planning each week. The last year has been painless and fun. I actually look forward to making it so I can post it here.

Just wanted to update something for my menu, instead of tilapia tonight I am actually testing out a recipe for Eggplant Parmesan , since the hubby has school tonight and he's apprehensive about trying the eggplant, so if it's good, I am sticking it in his lunch box for work tomorrow...shhhh...lol.

our first go-round with Atkins, I made a similar recipe quite often. DH was also skeptical at first, but really liked it. I haven't made it in ages (burned out on it way back when). But I think I will try it again. Maybe next week...

I just got a boat load of the canned chicken and I am looking for some interesting recipes besides the variations on chicken salad or the buffalo dip... can anyone come up with a casserole or easy meal out of these?

What if you did some sort of stuffed mushrooms or stuffed peppers? Depending on your carb allowance you could use cheese and herbs.
You could do Mexican w/o tortillas- maybe some type of fajita dish or soup?

I also found a thread about this topic and the coconut crusted chicken patties look awesome!

Canned chicken ideas?

I used to use it for anything that called for shredded chicken... mostly casseroles or enchiladas. Season it up for chicken taco salad. Stuff like that. Sorry, can't be more specific

Enchiladas do sound good...if you r able to use the low carb tortillas or have ingredients to make the crepes. ( I can't wait to try them after moving into the next phase) I would use it in a taco (made from cheese) and add some spicy jalapeno sauce, lettuce and other toppings. (You can also make a faux taco bowl using the same technique with the cheese)

I think I am going to find some coconut and try those patties... those sound amazing!!! I have some pineapple davinci's and maybe some cauli rice???? that will be dinner tomorrow night I think! Thanks!

Sides will just be green salad, raw veg with ranch and dill dips, canned green beans.

OK, I failed big time so far today as far as planning! I mean, by now I have my menu and shopping done! What in the world?

Well, we do have some things thawing for the grill- so far it's:

Sun.- tuna salad and other leftovers
Mon.- steak kabobs (with onions and bell peppers)
Tues.- chicken thighs
Wed.-Fri.- ???
I will be stealing some of all of your ideas, ha ha!

Mon (6/6): Pork Divan -meant for chicken, but using pork instead (was supposed to make this today, but I made Taco Bake instead- long story :blush + Celery Root Fries (didn't get the chance to make them last week)
Tues (6/7): Crispy Garlic Parmesan Wings + Zucchini Sour Cream Jack Bake
Wed (6/8): Tuna Casserole III
Thurs (6/9): Sirloin Steaks + Cheesy Broccoli Casserole
Fri (6/10): Coney Island Chili "Rice"
Sat (6/11): Dijon-Tarragon Cream Pork -meant for chicken, using pork + Roasted Green Beans
Sun (6/12): Crispy Mexican Chicken Melts (again, didn't get a chance to make this last week so I'm putting it on the menu for this week) + Tangy Mexican Shirataki

*We had a yard sale this past weekend so my menu went haywire starting Friday night so I had to rearrange my menu for this week to accommodate for the crazy mix up.

Feel much better now that I got my shopping and planning done!

Sun.- egg salad and other leftovers

Wed.- coconut crusted chicken patties
Thurs.- lasagna made with zucchini and ground beef or turkey
Fri.- leftovers

Lots of roasted/grilled veggies this week as sides. So much to pick from at the store and my hubby is into grilling right now!

Man, I know, there are some seriously gourmet menus here! Yikes!

It's funny, too, some of the items on Amber's menu... if I didn't watch so much British TV and cooking shows in general, I'd be lost. Although, I haven't got a clue what "rocket" is? lol

Aubergine is eggplant and courgettes are zucchini. And I assume you knew that prawns are jumbo shrimp - but bigger

Yes. Zoodles are zucchini noodles. There is this spiral slicer gizmo that makes long thin strips out of them, too.
