Here's what I'm cooking for dinner this week. How about you? Tues: BBQ Chicken (I posted my sauce recipe here: On-Plan BBQ Sauce For Memorial Day ...) and green salad Wed: FFY Thurs: Homemade Pizza (I use NancyElle's recipe with cheddar and mozzarella: Thin & Crispy Pizza Crust! Easiest EVER! Pics included! Fri: Meatloaf/veggies/cheese biscuits (http://www.lowcarbfriends.com/bbs/lo...-biscuits.html) Sat: Carne Asada and guacamole (Carne Asada Recipe | Simply Recipes) Sun: tandoori chicken (Tandoori Chicken Recipe | Simply Recipes) and curried creamed spinach (I'll make it up as I go along) |

It's hot, hot, hot here, friends! I'm planning to cook everything on the grill or in the crockpot this week.
-------- Mon: Grilled Chicken Taco Salad Tues: Crock Pot Swiss Steak/cole slaw (something along these lines but without the flour): Slow-Cooked Swiss Steak Recipe | Taste of Home Recipes Wed: Meatballs Stroganoff/green salad (like this but in the crockpot and low carbified: Beef Stroganoff Meatballs Recipe | Taste of Home Recipes) Thurs: Kofta (gr. beef kebabs) and tzatsiki/green salad (Kofta Kebabs with Tzatziki Recipe : Food Network Kitchens : Food Network) Fri: Chicken Paprikash/cucumber salad (based off this recipe, but in the crockpot: Low-Carb Recipe: Lime-Chicken Paprikash « The Red Kitchen Project) Sat: Jalapeno Burgers (we buy them already made from the butcher counter)/3 bean salad (based on this recipe but without the high carb ingredients: Mom's Bean Medley Recipe | Taste of Home Recipes) Sun: FFY |

July 26 - August 1
Wow, August already. Well, I guess I tried too hard last week to be creative and try some new things. I asked my husband what he wanted for dinner this week and he said something to the effect of "not to spend a bunch of money on a bunch of things nobody liked." Ouch. Well, I'm going to try a couple new things this week, but stay away from the "ethnic" dishes and big time experiments.
MON: in our High Carb days, we loved having these Bacon-Tomato Bagel Melts Recipe | Taste of Home Recipes so I'm going to use this recipe as inspiration for a pizza using the all cheese and egg crust. TUES: Breakfast for dinner with hamsteak WED: beef fajitas/green salad THURS: Grilled pork chops/cucumber salad FRI: Grilled chicken/green salad SAT: Lasagna a la Cleo The Lighter Side of Low-Carb: Low-carb lasagna with noodles. BTW my pizza idea for Monday was really good. After baking the crust and letting it cool a bit, I spread some ranch dressing, then bacon pieces, then diced tomatoes, then a little bit more cheese and broiled until the cheese was melted. I don't even like fresh tomatoes, but this kind of thing is different for some reason. Really good. Thumbs up from the mister, too.
