Another Breakfast Alternative Thread...

I know we all get bored with eggs for breakfast all the time so I wanted to start another thread for alternative ideas.

Having something different saves me very often.

This is what we have been doing lately:



Chocolate minute muffins w/ cream cheese on top

Pork rind french toast (ya it sounds strange but it's good!)

Cream cheese muffins or mini cheesecakes

Pumpkin bake

Sugar free Sheila’s cream cheese pancakes wrapped around sausage links

Anyone have any other ideas to contribute?

I like Rev rolls french toast.

I don't measure just eyeball.

I use a Safeway brand syrup sweetened with splenda. Even my little ones love this!

I like Oopsies and make them pretty often. Had not thought of doing them like this.. they ARE good as grilled cheese with tomato though!

i'm a huge fan of almond meal pancakes... from mark's daily apple, he calls them primal pancakes...

1 cup almond meal
3 large eggs
1/8 tsp vanilla extract
1/8 tsp ground cinnamon

i cut it down to 2/3 cup meal and 2 large eggs... with butter and walden farms syrup... sooo yummy! blueberries will be added next!

they are heavier than normal pancakes, but i loved them.

Ha! Was just going to post almond meal pancakes! Except for just one serving, I use 1/4 C. almond meal and one egg, a bit of cream and vanilla SF syrup, and skip the cinnamon.

Sometimes I eat Dannon low-carb yogurt with a Jimmy Dean frozen Ham and Cheese omelet when I'm in a hurry or eat it after I get to work.

I'm really not a b-fast eater though, and so lately I've been making "shakes" from Hood milk, cream, and 2 eggs. This is a good alternative for me.

I'm on a one minute muffin kick now - make mine with almond flour and eat with butter and SF strawberry preserves - yum!

Occasionally I'll eat Carbmaster yogurt or I love those Russell Stover SF granola bars with a cup of coffee.

Last, I like to make a breakfast taco. Yes, it has eggs, but for me eggs with cheese and salsa and wrapped in a low carb tortilla is a lot more interesting!

On most days, I'm just grabbing 2 big mugs of coffee (w/ hwc and DaVinci's) and heading off to work. However, when I make myself breakfast, my favorite is coconut milk pancakes!

I think this recipe came from Bruce Fife's book, Cooking with Coconut Flour. They are a little delicate, but worth it, IMO. This recipe always makes me 11 pancakes, and I can eat about 3 and I'm pretty well full.

Coconut Milk Pancakes

2 eggs
2 Tbls coconut oil or butter, melted
1/4 tsp coconut or vanilla extract
1/2 cup coconut milk
1 tsp sugar or rapadura (I use roughly 1 pkt Splenda)
1/8 tsp salt (I usually omit this)
3 Tbls sifted coconut flour
1/8 tsp baking powder

In a bowl, blend together eggs, oil, extract, coconut milk, sugar and salt. In another bowl, combine coconut flour and baking powder and mix thoroughly. Combine dry ingredients with wet to form a smooth batter. Heat 1 Tbls of oil in a skillet or on a griddle. Spoon batter onto hot surface, making pancakes about 2 1/2 - 3 inches in diameter.


Here's what my shot at nutritional info comes to:

For whole recipe: Calories-554, Protein-16.5, Fat-53.75, Net Carbs-7.7

For 1/8th recipe: Calories-69, Protein-2.1, Fat-6.7, Net Carbs-1

For 1/10th recipe: Calories-55, Protein-1.7, Fat-5.4, Net Carbs-.8

LC Pork Rind French Toast

Ingredients:
Ingredients:
1/2 of a 3-oz. bag of unflavored pork rinds
2 eggs
1/4 cup heavy cream
3 pkts Splenda(r)
1/2 teaspoon cinnamon
1/2 teaspoon egg nog extract [optional] (use vanilla)

Crumble pork rinds up until they resemble bread crumbs (use your food processor if you like - or put them in a Ziploc bag - air removed - and roll them with a rolling pin.) make them almost dust! Set aside.
Beat eggs well and then mix with remaining ingredients and beat again. Add crushed pork rinds to the egg/cream mixture and allow to sit for approximately 5 minutes. Mixture will thicken to a "gloppy" phase during this time.
Meanwhile, heat skillet or griddle with butter or oil, and when hot, fry pancake style until golden brown on both sides. Serve with your favorite low-carb maple syrup (DaVinci, Keto, Atkins, Howards, etc, etc.)
If you don't tell someone who eats them, they will never have a CLUE that these little french toast pancakes are made with pork rinds. And everyone loves 'em. Really. Yeah, really. Would I kid you?
Less than 1 carb per serving.
Extremely Important Notes:
The pork rinds must be a good brand with an extremely bland taste. In my area there are 4-5 brands available, but only 2 of them are really "puffy" and contain very little pork-rindy-taste. They are Baken-ets (Frito-Lay's national brand) and Huffmann's (a local brand.) Rinds that are super crunchy don't work well for this. It's also important that they be very well crushed - just one step above dust.
Also - remember to let it really get to its "gloppy" phase and don't rush it. Plus, make sure the skillet is hot before you start adding the mix - with just enough oil to moisten bottom of pan but not enough to fry chicken in.
Lastly, while the egg nog extract is optional, it really adds something. If you don't have any, we suggest you substitute a vanilla, rather than just leaving it out

don't knock it till you try it!
the bacon flavor the rinds have fits in with breakfast great. My husband loves these.

JODY'S PUMPKIN BAKE
8 ounces cream cheese, softened
5 eggs
1/2 cup granular Splenda or equivalent liquid Splenda
15 ounce can pumpkin
1 1/2 teaspoons Pumpkin Pie Spice
1 teaspoon cinnamon
1 teaspoon vanilla
Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350º about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving.
Makes 6 servings
Do not freeze

Yes, I forgot to mention that we have leftovers often.
It's quick and easy and we make double batches of dinners so we have lunches that get packed quickly.

I want to start making something somewhat special on the weekends. We have been at this so long I don't want to get bored.

Since I don't llike eggs, breakfast has always been a problem for me.

I now eat a BLT sandwich every single morning made with Schwebel's lite wheat bread (5 net carbs a slice). This holds me completely until lunch.

And I LOVE the sandwich so I don't feel deprived while everybody else is eating pastries and doughnuts. Not that I wouldn't love a pastry or doughnut once in a while

1 minute muffin made for the waffle iron.

All you do is make the regular recipe for 1 minute muffin and some vanilla extract. I posted the recipe on the 1 minute muffin thread if anyone is interested.

Good for any time of the day...

LC "donuts" I found the original recipe somewhere on the site but I can't remember now by who...
They taste more like fried dough to me.

I use Body Fortress protein power, so your nutritional info may change depending on your powder. And these can easily make 2 servings. I usually share with my DD.

Ingredients

1/2 stick of butter
1 egg
1 scoop protein powder
2 packets splenda
1/2 tsp vanilla
Cooking oil



Directions
Melt butter. Mix all ingredients, except oil.
Heat oil, slightly in frying pan. Drop batter by small spoonfuls into oil. Do not use large spoon or they will not get all the way done. Turn when slightly brown. Sprinkle with splenda.

Egg cream:

2 eggs
3 tbsp heavy cream
1/3 cup cold coffee + 1 tsp Maxwell House Instant coffee (I like a stronger coffee taste)
1 tsp liquid Sugar Twin (or 1 packet Splenda)
1 tbsp sugar-free vanilla syrup (or 1 tsp vanilla extract)
5-6 ice cubes


TEXAS SWEET ONION PIE by Linda Sue

2 T. butter
1 large onion, sliced thin
1 cup heavy cream
1/2 t. salt
1 t. chili powder (I left this out, didn't have any)
8 oz. Monterey jack cheese, shredded (I used cheddar cheese)
3 eggs

Saute the onion in butter until tender and slightly caramelised.

Place the cheese in a greased pie plate; top with onions.

Beat eggs, cream and seasonings. Pour over all.

Bake at 350º for 40 minutes until a knife inserted in the centre comes out clean. Let stand 10 minutes before cutting.

Makes 6-8 servings (6 servings - 4 carbs each) (8 servings - 3 carbs each)

OH, I forgot Flax z Snax from Netrition. We eat this fairly often, I like the chocolate one.. actually they are all pretty good.

No wheat bran or oats for me YET.. but when I get into Maint. I will maybe do while grains.. will see.

Thanks for sharing that though. I have to order from netrtion soon and get more of their hot cereal.

I just pulled up this thread last night.. the not cake, not brownies one.
I have not made this exact recipe yet but I have a protein bar recipe somewhere that is good.. that is another good breakfast!
