Wanted: Ideas for Sides w/Meals this Week
I need some LC ideas for sides to go along w/the following meals:
Bacon wrapped ranch style chicken tenders Shrimp in butter and garlic Pork Butt Roast (BBQ style) Chicken Parmesana (P.S. LC marinara sauce? Brand?) |

With the bbq pork I'd do some LC coleslaw. With the chicken parmesan I'd make up an Italian themed salad...with stuff you'd find on an antipasta platter. Just light on the meats and cheeses and heavier on the veggies since it's supposed to be a side dish and the chicken will already have a good bit of cheese. Any canned sauce without sugar is fine. Personally I like Hunts. I think it's 4 carbs per serving after fiber. With the shrimp I would steam some broccoli and drizzle some of the garlic butter over the broccoli as well. For the ranch chicken I would make some roasted green beans. A couple good handfuls of fresh or frozen whole green beans, toss with a bit of EVOO, some S&P and roast at high heat until browned. |

This is a Barefoot Contessa recipe that I tweaked earlier this week (I didn't have fresh basil, etc) - very good!
Roasted Broccoli Parmesan Toss 2 lbs of fresh (not frozen) broccoli florets with olive oil, the juice of one lemon, salt, pepper, and 1 teaspoon dried basil. Spread out on a sheet pan, and roast at 425, stirring occasionally, until starts to soften and brown, about 20 minutes. Toss in 1/2 cup parmesan cheese; continue to roast, stirring occasionally, for about another 10 minutes. VERY good - the lemon gives it a nice zing. I plan on trying this without the lemon but with a little diced bacon sometime soon.

My favorites now are roasted brussel sprouts and roasted zucchini with onions and roasted yellow squash. The roasting brings out the sweetness in the squash. I just slice them up and coat them with olive oil and salt and pepper.

Salads, mostly leaves, dressed with plenty of olive oil or some mayo.
Green vegetables maybe with a little cheese grated over them and lots of butter! |

that is almost exactly what i did with asparagus tonight for supper. yum yum yum.
a lady at samsclub told me how to do it saturday. the only diference was i added a little garlic and salt before baking |
