what's your menu consist of for X-mas day?

i am making the following:

turkey
broccoli casserole
sauteed green beans
pumpkin cheesecake
mashed potatoes and gravy (for those not on lc)
and fudge (for those not on lc)

i'm so excited, this is my first year cookign and i can eat almost all of that..mmmmm...

My menu has changed a bit since I posted one back in November. Now it will be: beef tenderloin, creamed spinach (low carb-no thickener of any kind), scalloped potatoes with 2 cheeses for dh (he requested those last night), crescent rolls for dh and probably a rum cake

ETA: Now that I look at it, there's not much I can eat but the beef and spinach lol

Just my daughter and I so we are keeping it simple. Chicken fajitas (low carb tortillas of course) guacamole, cheese, sour cream and all the fixings...

I wont cook this year as we will be out. But last year i roasted two chickens in the oven with vegetables underneath. With rice and few salads on the side.

hmm...

for christmas in england im not sure if you know but we all have a traditional turkey christmas dinner, kinda like your thanksgiving.

Breakfast is bacon and eggs

Dinner consists of prawn salad to start
dinner is roast turkey with sage butter, gammon, sausages wrapped in bacon, roast veg, brussell sprouts
Dessert will be whipped cream and strawberries

For Christmas dinner, my BIL is cooking. He's roasting a chicken with traditional, seasonal veg. Mashed and roasted potatoes (which I won't be eating) and everything will be smothered in gravy (except mine). He is also making 3 carb rich desserts. I am bringing squash casserole (thanks to Linda's site), fauxtatoes and pumpkin dessert (not sure which one).

I am cooking on Boxing day which is the day after Christmas here in England. I cooking a ham, potato salad (for everyone but me), baked beans and devilled eggs. I have store bought sugary desserts for everyone else and I'm having Margot's cream cheese dessert with jello and raspberry sauce. Oh, and there will be a cheese platter as well.

Do you boil your ham/gammon first before baking it? I've heard mixed feelings on this. DH thinks I should boil it first before putting it in the cooker/oven.

i dont think the unsmoked ones tend to be overly salty now... mixed feelings really... you can boil it, i may do not 100% sure yet... just gutted i cant glaze! im gonna cover in mustard and herbs instead.

Nothing fancy...can't afford it this year. Heck, even the potatoes were left over from Thanksgiving and are still good to use!!! Now that's what I call being thrifty LOL
