Lazy Low Carb Menu's

I keep track of my menus in FitDay.com but I thought I would start posting here too just to give an idea to some newer members of things they might try. Of course you'll want to change it up to your particular tastes.

8/30:

B- 2 eggs scrambled with 1/4c. shredded cheddar, 1 T dried chopped onion & seasonings (I used Mrs Dash Southwest Chipotle)
S- 6 celery sticks w/ 3 T. cream cheese spread*
L- 2 LC Tuna Salad Lettuce Wraps
S- 1 Russel Stover SF Toffee (I had a sweet tooth )
D- 6 celery sticks stuffed w/ LC Tuna Salad, small salad** w/ranch
S- 3 LC Deviled Eggs

*Cream Cheese Spread- I make one big batch and then use it all week...
8oz. cream cheese, 6 small pimento stuffed green olives chopped, 2 celery sticks chopped, 3 T real bacon bits, Mrs Dash (Garlic & Herb) (8 carbs total)... mix well and store in fridge
**I usually have 1 c. lettuce, 4 slices of cucumber, 1/4 c. sliced radishes, 1/4c green pepper sliced thin, 1 chopped boiled egg, 1 T bacon bits and 2 T ranch dressing (6 carbs)

8/31:

B- 2 eggs scrambled with 2 oz of sausage, 1 t dried chopped onions, 1/4 c. shredded cheddar and Mrs Dash
S- 3 Celery sticks stuffed w/ LC tuna salad
L- Hamburger cabbage*, small salad w/ranch
S- 2 oz. sliced cheddar cheese, 1 oz sliced bologna
D- Fajita Steak (6 oz) (Flank steak grilled w/ fajita seasonings), small salad
S- 3 Lunch meat rollups**

* Hamburger Cabbage- 1 Small Head of cabbage (shredded), fried in bacon grease (10 minutes), remove and brown 1 lb. hamburger in same pan along with 1/4c. (fresh) each yellow onions, green peppers, mushrooms and chopped tomatoes, once browned and veggies starting to soften add cabbage back to pan and cook another 10 - 15 minutes or until done. Add the seasonings of your choice to taste. (47.2 carbs for entire recipe, 8 servings @ 5.9 carbs)
** Lunch Meat Rollups- 3 slices Carl Budding meats (or something similiar very thin slices), 1 T cream cheese spread (or just plain cream cheese), portion the 1T cream cheese into 3 and spread each slice of meat w/cream cheese then roll up and enjoy (4 carbs)

Hope this helps someone needing some easy no fuss ideas.... Will post more tomorrow!

company and any others, and I hope that many others shall be coming
Not only do I think this is good for those of us who still need to loose,
but even those on maintenance. We give each other fresh ideas about
what to cook and how to do it sometimes.

Coco,
You eat lot's of low carb. If any newbie sees your menu they will be
very encouraged. For instance no one starves or is hungry on LC.
Your menu is diviersified.

Here's mine:

Brunch:
Papa Salami Scramble
2 eggs, 1 slice salami cubed, butter in non-stick skillet
LC biscuits made with CarbQuick
Cream cheese
LC. peach jam (2 tsp.) homemade
Coffee with cream and Splenda

Snack
Bologna rollups with Irish cheese and lettuce, mayo, tomato
inside. YUMMY
Diet 7-UP

Dinner:
Grilled burger,
little saute of onion
green beans from the garden with bacon cooked in it.
Celery with my ranch dressing.
Black olives,
Saute of cabbage.
Tea with Splenda

Snack
Jody's Pumpkin Bake (recipe on LC Recipes and Menus)
Dollop whipped cream
Decaff coffee

It's great to see someone else posting their menus... I just popped in here and really saw the lack of menus and thought it needed some more!

I also encourage others to post their menus here... I remember what it was like when I first started, kind of overwhelming and just a bit daunting... having never eaten this way before.

Naturally there are tons of recipes and different ways to jazz up your menu guys, so let's see some more!

Here's mine, though I sleep on a different schedule than most so mine is a little wonky.
Upon rising...
Sausage stir-fry: smoked sausage and veggies stir-fried (recipe and pic Vikki's Low-Carb Kitchen)
Drink vinegar water

Snack
Peanutbutter sour cream pudding

Meal 2
French Eggs; french toast without the bread and cream cheese added with lc syrup drizzled over Vikki's low carb kitchen: French Eggs, and 2 slices of bacon
Iced tea

Snack
handfull of roasted almonds

3rd meal
Blt pita sammy with veggie sticks and dip ( pepper, celery and a few baby carrots)
Vinegar water

That was my meals yesterday. Still working on todays ...giggle

I have a very abnormal schedule too.... I work from 3:00am to 11:00am, then come home and take care of everyone here... I have a hubby & 13 & 3 y.o. DD's so my day doesn't end until somewhere around 8 or 9 pm... I get about 5 hours of sleep a night but it's perfect for me. So to anyone else who thinks they can't do this because of their schedule or maybe because of where they work (I work in a gas station/fast food restaurant, HIGH CARB HEAVEN)... You CAN do this! You CAN find a way to work around all schedules and all obstacles... just be true to you!


9/1/08

B- 1 egg, 2 slices of bacon and 3 oz pork tenderloin
S- 2 beef sticks
L- Steak Fajita salad w/ 1T sour cream, 1T Guacamole, 1/4c montery jack cheese, 1/4c (total) green peppers & onions, 1 & 1/2c salad (sauteed skirt steak strips in fajita seasonings)
S- 3 celery sticks stuffed with LC Tuna Salad
D- 1 & 1/2c salad with 4 slices cucumber, 6 small stuffed green olives (sliced), 2 fresh mushrooms sliced, 1 egg, 1 T bacon bits & 2 T Ranch
S- 2 LC Ham salad & lettuce leaf rollups

9/2/08

B- 3 slices of bacon (not usual for me I had a very busy morning, if you're just starting out try to eat a good breakfast to rev up your metabolism)
S- 1 beef stick & 3 oz colby cheese
L- Cheesy Mexican chicken & 2 celery sticks w/ 1 T cream cheese spread
S- LC Tuna salad on 1/2c lettuce
D- Leftover Hamburger cabbage, 1c salad w/ 1/4 cheese and 2T ranch
S- 2 cheese sticks

*Just a quick note.. tuna comes canned of course but you can also buy chicken and ham that way too (chunk) and use them to make a quick LC salad just add mayo, your fav veggies and a touch of splenda On a budget? You can buy them at most Dollar Stores for a $1 to $1.50 a can (ham & chicken)

I try to always keep a can or two of canned chicken on hand. As long as it's not Swanson's all is good. We really like either the Wal-Mart or Tyson brands. Perfect for a quick chicken and veggie Impossible pie, among other things.

I agree, your time schedule can be a bit of a challenge sometimes, but if you put your mind to it, you can work it out. It doesn't matter what time you eat, it only matters WHAT you eat.

First meal
3 eggs, with cream, cream cheese, garlic, bell pepper and squash all scrambled into a nice bowl of creamy yummy goodness
Vinegar water

Meal two
Cajun grilled catfish,with grilled onion, tomato and pepper. Cabbage with pot liquor and beans
Diet Coke

Snack
1 piece The recipe I tried that was posted yesterday for coconut bark.... so didn't work for me, but I'm going to see if I can fix it today

Third meal
Bologna sammy on Joseph's lavish bread with a hand full of almonds and a few pepper strips.

S- 3 slices of bacon
L- 4oz hamburger patty, 1 slice of deluxe american, 8 small green olives sliced and 1c. salad w/ 1T bacon bits, 4 slices of cucumber & 2T ranch
S- 2 beef sticks
D- Garlic & Herb chicken (baked), cheesy broccoli casserole and 1c. salad w/ 1 T bacon bits, 1/4c cheese, 6 small green olives, 4 slices of cucumber and 2T Ranch
S- 1 SF fudgesicle (I do indulge once in awhile)

Scrambled eggs with cream cheese, a nice ribeye steak and broccoli
Meal 2
Cherry julius, cream, hood milk, crushed ice, cherry flavored stivia, 2-3 drops sweetzfree and a little vanilla about an ounce of roasted almonds ( first meal still had me pretty full)
snack
ChocoPerfection dark chocolate bar... can't believe I ate the whole thing... I will be regular tomorrow...giggle
Meal 3
Cinnamon 1-minute muffin with cream cheese
Had ACV water with all meals but I didn't get my normal amount of veggies in. Just wasn't very hungry today.
Will have to concentrate on doing better tomorrow. Took stuffed squash out of the freezer to go with stuffed meatloaf. That should up the veggie count.

Hi all! Hope everyone is having a great lowcarb day and even if you're not well... there is still time today and always tomorrow to get back on track! Don't let one bad choice ruin all the hard work you have done!

9/4/08
B- 1 egg, 1 sausage patty, 1 slice of deluxe american & 3 slices of bacon
S- 1 polish sausage w/mustard
L- 1c. salad w/ 1T bacon bits, 6 small sliced green olives, 1/8c of cheese & 2 T ranch and a 4oz hamburger patty w/deluxe american
S- 1 beef stick & 3 celery sticks w/ cream cheese spread
D- LC Broccoli cheese soup*
S- 2 string cheese sticks

*Broccoli Cheese Soup-
Put a 16oz package of frozen broccoli into a saucepan with 1/2c. of water, cook on medium until thawed and warmed through. Add 2T chicken bouillon powder (the cube takes too long to disolve), pepper to taste, 1T dried chopped onions, 3T sliced almonds and 3T bacon bits (real only). Mix well and add 3C water. Bring to a simmer and then add 8 slices of deluxe american cheese, I did it 2 at a time until they melted, once it is all melted mix well and add 4oz cream cheese, simmer until it is melted (stirring occasionally) then add 1/2c heavy cream and simmer until thickened to your liking. Makes 8 servings @ 43.6 carbs total & 5.45 carbs per serving.

I use deluxe american because each slice has 1 carb compared to 2 carbs for regular american.

Afternoon everyone! I found a great recipe that I am going to try for dinner tonight. I found it on Linda's Lowcarb Menus site. Having a good day so far but I admit, I am being a bit "lazy" today! lol I really need to buckle down and get my housework done. Anyhow on to the menus:::

9/5/08

B- 1/4c Roasted Almonds, 1c salad w/ 2T Ranch
S- 1 beef rollup (thin sliced roast beef w/ 1T cream cheese spread)
L- 1c. LC chicken salad, 6 celery sticks (2 celery stalks)
S- SF chocolate pudding
D- *Cheesy Hamburger & Broccoli bake (recipe on Linda's), 1c salad w/ 1/4c cheese, 1 chopped egg, 1/4c sliced fresh mushrooms and 2T ranch
S- 1 *cheese rollup(recipe on Linda's), 2T salsa


*I will modify these recipes slightly.

Cheesy Hamburger & Broccoli Bake- I'm adding 3T minced garlic, 4 slices of bacon (fried & crumbled), 3T cream cheese - I think the recipe needed something more.

Cheese Rollup- I am using 1oz of mozzarella, sprinkling some of my Mrs Dash Southwest Chipotle on and then sprinkling 1 oz of cheddar on top.


I also wanted to say that if my menus don't look like enough to keep you full or if you have tried them and are hungry, definitely add something to them. My choice would be to add more meat because it fills you up really well. I think the longer you do this, you find that you aren't as hungry and therefore can easily cut back on the amount you eat, after all they do say to eat until you are satisfied not stuffed! (I am guilty of that, now and then I still do it! lol)

It's just something I came up with, because I wanted something sweet and all I had in the realm of cream, was sour cream. So I mixed it with a couple pkg. of true lemon, vanilla, a drop or two of sweetzfree and a 1/2 pkg of stevia.
It was so good, the next night I mixed in a tbsp. peanut butter, 1/2 pkg. of cherry stevia, the sour cream, a splash of cream (to help thin)and the sweetzfree. It was soo good I thought I would cry. I haven't made any more peanut butter because I'm afraid to over eat it. But I have tried a few other flavors. It's so easy and made with things I always have on hand. It's a quick fix when you want something sweet. My next favorite is True orange and vanilla.

I missed posting yesterday, was just soo busy but I am here today! I hope everyone is having a great day!

9/6/08

B- Pork Tenderloin, 1 egg and a slice of Deluxe american cheese
S- 1 beef stick
L- 1 small salad w/ 2T Ranch
S- SF caramel pudding
D- *Mock Pizza, small salad w/ 2T Ranch
S- 2 cheese sticks

*Mock Pizza- it's basically just pizza toppings w/o the crust. I used 1/4c CHef Boyardee pizza sauce (3 carbs), 2 oz. cooked Italian sausage (0 carb), 8 pepperoni slices (0 carb), 6 Black Olives (1 carb), 1/4c. Green peppers (2 carbs), 1/4c onions (3 carb) and 1/4c mozzarella cheese (1 carb), place all ingredients (but the cheese) in a sauce pan and warm through, place in a small casserole dish & cover with cheese then bake @350 for 5 - 10 minutes, until cheese is nice & melted and just a bit brown - 10 total carbs for entire dish

9/7/08

B- 2 eggs scrambled with 3oz ham, 1/8c. cheese., 1/8 onions & 1/8c. green pepper
S- 2 sausage patties
L- Leftover Cheesy Hamburger & Broccoli Bake
S- 1 beef stick
D- 3 turkey roll ups
S- 2 pieces SF chocolate

I want those of you who are new to know... not a single person on here is perfect (and you won't see anyone claim it either lol) and we all have "slips" but it's important to hop right back on the wagon and continue... don't say "well I blew it today so I wll just eat whatever and then start again tomorrow" ... start with the very next meal... it's so much easier!

I have decided to begin Atkins Induction. I came across your post while doing my research. I like that you post your daily meals and that is what I am looking for. I would like some ideas for daily meal plans for induction, could you share some of yours? I prefer quick, easy, no-fuss meals as I'm not one to spend time in the kitchen.

I have used Physicians Weight Loss and Quick Weight Loss to loose before so I understand LC and actually prefer it. Eating LC is so much easier than counting calories, etc.

Glad you found us and that you are starting Atkins induction. I will be the first to admit that it isn't hard starting this WOL but sometimes it's hard sticking with it as I have already demonstrated today. lol

I'm a simple no fuss gal too! I have a 3 y.o. DD and a 13 y.o. DD and I almost never have enough time to make "elaborate" or time consuming meals. What I post is what I eat, pretty much on a daily basis. I do keep staples around and those are:
Meats- chicken, turkey, ground beef, beef, pork, sausage, bacon and fish
I also have beef sticks to munch on, deli meats to make rollups and such with, bacon bits (for salads and seasoning)
Veggies- (fresh) Lettuce, cucumbers, tomatoes (just not on induction), celery, green peppers, cabbage, spinach, broccoli, garlic and cauliflower
(Frozen) broccoli, cauliflower, peppers, green beans, and different mixed veggies
Dairy- heavy cream, butter, eggs, cheddar, swiss, mozzarella, colby, cream and deluxe american cheeses
Spices- Love Mrs. Dash there are just so many to choose from! , salt, pepper, dried minced onions, onion powder, garlic powder, red pepper flakes, cumin, cilantro, sage, thyme, and tons more I can't think of just now... just read the labels and make sure what you buy doesn't have any added sugar

Generally I take what I always loved to eat and make it in a LC way... I also look through the recipes here and then add or change them to my taste. One thing I do is make stuff ahead... when I go to the grocery store, I come home and clean, sort and bag or put into containers things that I need for the week. I will make some cream cheese spread up ahead of time, pack salad servings into bowls, make some beef, ham & turkey rollups and keep them in containers... I try to plan ahead on my menus too so I have an idea of what I am going to eat.. seems to help me from eating off plan (uh... most of the time, lol) I usually fry up a bunch of hamburger and then divide it into 1 pound servings and refreeze it, that way when I make something with it, it's already cooked and takes no time at all to "reheat" and add to dinner.

Thanks for taking the time to respond to my post. I appreciate your suggestions and clearly you are very knowledgeable in making your WOE successful.

I have decided to continue with my current LC plan through the weekend and start induction on 9/15. I should be okay as I am already past the headaches, fatique and general yucky feeling that comes with beginning LC.

Thanks again and I look forward to using some of your ideas as I move forward to my goal!

Ok, back to post today's menu...

9/11/08

B- 6 slices of bacon
S- LC chicken salad with 3 celery sticks
L- 3 *Asapargus steak rollups and small salad w/ranch
S- 3 ham rollups
D- **LC meatloaf, LC green bean casserole, mock mashed potatoes
S- 3 LC deviled eggs


Asapargus Steak rollups- (need asapargus, breakfast steaks, seasonings, 1 T cream cheese softened)
Heat a frying pan w/2 T olive oil & 1 T butter, boil asapargus until just fork tender (still a tiny bit of a crunch), then place them in ice cold water to stop the cooking, take sliced breakfast steaks and pound them out a little until super thin, season the steaks to taste and spread a small amount of cream cheese on them, lay 1 or 2 asapagus stalks on the steak (depends on how big the asparagus is) and roll up, secure with a toothpick and then place in hot frying pan and brown the rollups (I like mine a bit on the rare side so just about 3 minutes total for me)... these cook up quick because they are so thin. In case you haven't cooked or eaten asparagus before, you always want to take off the woody bottoms, I do it by bending them about 3/4 way down and it will naturally break off at the right spot.

LC Meatloaf- I have read tons of LC recipes but have decided to make my own. We'll see how it turns out but this is my plan:
2 pounds ground beef, 1/4c chopped mushrooms, 1/4c green pepper, 4T minced garlic (I use the jar kind I find in the produce aisle), 1 onion soup mix packet, 1/2C parmesan cheese (dry kind), 3 eggs (beaten well), 1/3c Heavy cream, salt & pepper to taste (approx)3t of each and the lowest carb tomato sauce I can find. Mix all but 1/2 the tomato sauce and form a loaf, place in baking pan and cover with the rest of the tomato sauce, cover and place in a 350 degree oven for 45 minutes, then take off foil and brown for another 15 minutes. I can't wait! lol

I like quick and easy too. I try to use all the little tricks in my arsenal to help make it as easy as possible.

Welcome to the group, I've only been around here a short time myself. Though I have been on low carb for over a year. I've started double cooking the past couple weeks to help me out. So far it's working very well.

Morning coco! Morning to all those lurkers too!

Well I ended up missing snack 1, lunch and snack 2 yesterday but did not overeat later and really wasn't too hungry. We went shopping and just didn't stop for anything lol. But I did make the meatloaf and it was fairly good but I did miss the ketchup, lol, I need to figure out a lowcarb way to make tomato sauce more "ketchupy" It was a bit on the salty side too so I will cut back on the parmesan next time... I am going to make some fritatas this morning for breakfast, yum-o!

9/12/08

B- 3 *Fritatas
S- 2 oz. colby cheese, 10 slices of pepperoni
L- Asparagus steak rollups, small salad w/ranch
S- handful of *Cinnamon Nuts, 2 celery sticks w/ LC chicken salad
D- Beef roast w/ creamy horsey sauce, crab stuffed mushrooms and a samll salad
S- SF pudding

*Firtatas- 3 eggs & 2 T heavy cream whipped, add your favorite extras (mozzarella, bacon, mushrooms, onions & green peppers for me) spray mini muffin pan and pour even amounts into each muffin spot, bake at 350 for 8 minutes (or until set)

*Cinnamon Nuts- Melt 1T butter in a frying pan and add 1/2c pecans and 1/2c walnuts, toss to coat and heat through then add 2T Splenda brown sugar and 1t cinnamon, toss to coat and transfer to a cookie sheet, bake at 200 for around 15 minutes, stirring twice through baking. These are warm, toasty and delicious!
