![]() Here's the whole recipe. Raven's Mushroom/Asiago burger with"Bun". Fixin's: I sauteed 1/2 inch of onion (thin rings) with about a 1/4 cup sliced mushroom in butter, with granulated garlic. Then I set it aside. Then, I took about three or four handfuls of pork rinds and crushed them in my hands (till I had a little more than half a cup) and added 1 egg, and two small handfuls of Mexi-melt cheese, and mixed them well. (It's a dry mix, don't be put off by this. I added a little granulated garlic and basil to the mix for seasoning. I poured about a tablespoon and a half of peanut oil into a crepe pan, and made two patties out of the mixture. (It tends to be prone to falling apart-- however, I'm stubborn-- I got two hand sized buns out of this, with a small "bonus bun" leftover. That one became a snack. Then I fried them (on low medium heat) till they were golden brown on one side-- flipped them, and cooked them till they were golden brown on the other side. Then I took some organic ground beef-- seasoned it with Trader Ho's beef grill seasoning, and made it into a patty to fit the "buns" I'd just made. I cooked it till just a little over medium rare. I put the Onion/Mushroom mixture on top of the burger and covered that with two thin slices of Asiago cheese. I covered the whole thing with a lid that fit the pan, cooked for about 4 minutes or so-- until the cheese was well melted. I let it cool for about 2 minutes. Then I placed the burger on one slice of the "bun" and slathered mustard over the other one, and topped the burger. The completed burger held up all day-- I tend to eat one quarter of a burger at a time, with about 2 hours between each mini-meal. The bun did not get too soggy. Oh. My. Heavens!!!YUMMMY.

Just plugged Mondays menu into Fitday and am going to add 4.2 ounces broiled chicken breast to the day. 1/2 on my pesto pizza and 1/2 on my alfredo.

LOL thought I posted my menu today but going back I see I did not... err sorry but I suffer from "sometimers" (sometimes I remember things and sometimes I don't lol) anyhow here is mine for the day...
Menu 3/1/09 B- Western Omelet (diced ham, sausage, onions, green peppers, 2 eggs and 2 slices of deluxe american cheese) and 3 slices of bacon S- beef stick L- handful of nuts (we were out running today) S- none D- leftover Cordon Bleu from yesterday and Mock mac n cheese S- 2 SF Russel Stover toffees That's it for today. Not sure what's on the menu for tomorrow, I'm thinking of trying a new recipe I found for Cheese Stuffed beef rolls, if I do I'll let you all know how they turned out (and tasted). Good night all!

Hey y'all.
I really didn't eat much today-- I had leftover ribs, coffee and a Diet Hansen's soda. ![]() For desert, I'll have another soda, this time with cream. It's tangerine Lime. Quite frankly, I'm too tired to do much else, tonight. ![]() However, I'll be making a couple of things tomorrow, so I can actually have good low carb meals this week-- so; here's what I'm planning-- Mexican Quiche with Chorizo, Green and Red bell Peppers, Green Onions and Mushrooms (Because I keep forgetting to have Breakfast!) Seafood & Chicken Jambalaya with Cauli-"rice" Catfish Nuggets Cut up raw veggies for snacks Homemade dip Hopefully, this will help me eat a little better--it's going to be hectic this week, so I'm actually going to try to be prepared.... ![]() |

Evening all! Hope everyone has had a great day, mine was good but tiring.
I've been trying out some new recipes (not my 3 ingredient ones yet, sorry lol) and we tried Fried cabbage casserole (it was pretty good but needs some tweaking) and tomorrow I am making a low carb Beef Stroganoff (scratch)using a sirloin tip roast for the beef, should be good. Menu 3/2/09- B- 2 sausage patties, 1 egg, 1 slice deluxe american S- beef stick L- salad w/ ranch S- 1 oz mixed nuts D- Fried cabbage casserole, Tomato Provençal and small salad w/3 cheese italian S- 2 SF Dove dark chocolates That's it for tonight... have a good night and a good day tomorrow! |

Evening all! Hope everyone's day was a good one! I worked out on the Wii tonight, did 10 minutes of yoga, 10 of step aerobics, 10 Hula hoops and 10 of light running. Whew! That really is a good workout, esp. if you're not used to doing it on a regular basis, even with my walking it still had my muscles achin a bit when I was done, lol.

Surfdoll, my roommates are using Wii-fit. How's that working for you? I'm thinking of trying it. Erica - I love the Wii, it makes working out fun plus it's a great way to stay active in the winter. My kids also love it so it helps them get more active and we have turned it into a bit of a competition to see who can get the highest scores.
One of the nice things about it is that it keeps track of your time so you know exactly how much time you have spent doing each activity and I like the body test too, it shows you your BMI along with your weight (though it seems to weigh heavy compared to mine & my doctors' scale) and it shows you your center of balance, I tend to put more weight on my heels and a bit to the right (yes, it's official, I'm unbalanced, LOL). Menu 3/4/09- B- 2 eggs scrambled with ham, green onions, rosemary, mushrooms and deluxe american cheese S- beef stick (stuck on those lately lol) L- 6oz steak, salad w/ranch and grilled veggies S- 1 oz mixed nuts, 2 string cheese sticks D- LC Beef stroganoff, green beans, mashed turnips (gonna give those a try) S- SF Cheesecake snack Well that's it for now, I have some running to do today so I had better get in the shower. That stroganoff was really good (we had mixed greens instead of green beans) I also made some bacon wrapped shrimp .... I will work on the recipe a bit though, it's not quite as low in carb as I think I can get it (while keeping the flavor up there) plus it's a bit time consuming to make lol (this is the lazy low carb menu thread after all) ![]() I did like the turnips but they are a bit watery so I will have to cook them a bit more after mashing next time, cook off some excess liquid... all in all in was a delicious meal! Good night all! Erica- definitely give it a try, there is something for everyone in it, it also has strentgh training but I am going to hold off on that for a bit longer, I need to get everything else down pat first. ![]() |

For the bacon wrapped shrimp-
Shrimp, bacon, Monterey Jack cheese (I buy the 8oz Kraft block cheese), Parmesan, Old Bay seasoning, Olive Oil, Garlic & Onion Powder and Cayenne I used peel & eat shrimp (pre-cooked) if they are not deveined make sure you do that and butterfly them in the process and I take my bacon, cut it in half and then partially fry it (about halfway so it is still pliable).... In a bowl mix 4T Olive oil, 2T Old Bay seasoning, Onion powder, Cayenne & Garlic powder (to taste). Peel the shrimp and rinse it off, pat it dry with a paper towel and then put in the bowl and flip it around in the "marinade". Cover it and chill it for an hour in the marinade. Slice the cheese and cut each slice in half, you want a fairly small piece of cheese. Spray a cookie sheet with Pam, take a shrimp, place a slice of cheese in the shrimp and wrap the bacon around it, then secure with a toothpick. Once they are all done, sprinkle some parmesan on them and put them in a 450 oven for 10 to 15 minutes. They are super good, my picky 4 y.o. mows right thru them, lol. **If you have a metal rack you can put on the cookie sheet, it helps so the grease drips off and they aren't quite as greasy but if not, just drain the on paper towels. Here's today's menu: I have cut down on my artificial Sweeteners-- though it's pure torture. No Crystal Light for me... My Menu today will be: Breakfast: Coffee, cream and 4 equals (I forgot to pick up Sweet and Low) Snack: Pork Rinds, Cafe Americano with 2 Splendas, not 4 . Lunch: 4 Turkey Roll-ups with 4 slices Gouda Cheese, 1/2 avocado Dinner: Chicken Kielbasa with onion, red and yellow bell peppers, Pork Rinds on the side Snack: Pork Rinds with Salsa and Sour Cream Drinking water throughout the day. |
