I haven't seen you for a while, Iwilldoit1978! I was happy to see your post!
The vinegar water is putting the Braggs Apple Cider Vinegar in water. I drink it daily, also. This is the vinegar with the "mother" in it; not the kind from the grocery stores. Your menu looked good! I love this thread; it's been very helpful to me. |

I don't mind the vinegar water at all. I just add 2 t. or so into about 1/2 cup of water and quickly drink it. I take it for health benefits.
Are you as addicted to Diet Sunkist as I am? I wish I had never started drinking it; I love it! It is really good with a bit of cream, too! On Induction, Dr. Atkins said to eat until you were full as your appetite will diminish. He said that Induction wasn't about quantity, so you shouldn't worry about that as long as you are eating correctly. Just have to get that "carb monster" out of your system. Believe me, I know exactly what you are going through. I struggle as well! I should have been at goal a long time ago! It's so frustrating because a few weak moments can lead to a binge that lasts for months! We all understand about doing this for the 100th (or whatever!) time! ![]()

When I get home, I'll probably snack on Pork Cracklings or Pork Rinds or 2 ribs of celery stuffed with Gorgonzola cheese. This seems to be more than enough for me! ![]()

I know, I was wondering where everyone went to?! I will post my menu yesterday since I have not yet eaten today (just coffee, bad I know!)
As you will see in this menu I didn't have breakfast yesterday either...I usually tend to have coffee in the morning cause that is all I have time for with the kids running around and I am generally just not a breakfast person... Morning: 2 cups of coffee (in one mug), with 2 tsp non dairy creamer, 2 tsp of sugar (we ran out of sweetener, oops) Lunch: 3 eggs scrambled with 1 deli slice of Am. Cheese 4 slices of turkey bacon Diner: 2 hamburger patties with 1 slice of deli Am. Cheese a few slices of cucumber That's it! I don't have much variety since we need to go to the grocery store this weekend (is it wrong I had hubby steal some sweetener packets lastnight from work? lol), but I was pretty content with what I ate and I drank a lot of water so I wasn't starving like usual at night time. Incase you are wondering why we only go to the grocery store on weekends...we live about 30 minutes from civilization (this will be changing soon) and doing that alone with two 14 month olds...I'll wait, thanks,lol I hope to see everyone back to posting menu's...I will try to remember as well, although I will also be posting my daily menu on my lcf blog as well. I tend to baggie up the chix and let it marinate overnight, turning every so often. (I have insomnia, so that's fairly easy) ![]() Consider that I made a huge Costco sized Pack of Chicken-- and you'll see why I made so much of the marinade. I heated the oven to 400 degrees, oiled the pan(s) with Peanut oil-- let that oil get very hot, put the drumsticks in the pan. Then I sprinkled them with a mix of Granulated Garlic, Cumin, and Trader Joe's "21 seasoning Salute" seasoning. I baked the chix at that temp for about 20 minutes, then turned the heat to 350, and baked for another 30 minutes or so. Another nice touch-- sprinkle them with toasted Sesame seeds. Rolling the chic in Toasted Sesame seeds before baking is also lovely-- turns out nice and crispy. Another thing I like to do is reserve the marinade, add chic broth, and boil it down to a sauce, which I often thicken with a little (1/2 teaspoon) Xanathan Gum, and 1 teaspoon of Splenda) and then I pour that over the chix when serving. You could also add a little Red Chili paste to give the sauce a little kick. You can also make a huge batch of the marinade, boil it-- and then freeze it in baggies for future use. I also use this same treatment for Country Style Boneless Ribs, which I'll be making today. (Though, I think I may do a different seasoning mixture-- maybe a curry.) Hey all! Unfortunately I will probably be popping in and out of the boards for awhile.... we still have tons of insurance papers to fill out and such (had a fire at the end of July and the paperwork is astounding
) anyhow if y'all don't see me for a bit, I will be back (eventually lol)... ![]() Menu 2/27/09- B- 2 smoked sausage links (approx. 4 oz total) S- beef stick L- 5 beef roll ups, 1 serv. pork rinds w/ cream cheese & chives spread (to dip) S- beef stick D- Crustless pizza (basically toppings only) - ham, pepperoni, sausage, green pepper, mushroom, black olives, onions & mozzarella S- 1 oz deluxe nuts Menu 2/28/09- B- Scrambled eggs (2) & 4 slices bacon S- SF Jello pudding & 1 oz deluxe nuts L- Italian burger (hamburger patty topped with sliced mozzarella, sliced cherry tomatoes and basil) small salad w/ranch S- pork rinds w/cream cheese spread D- *Asparagus Chicken Cordon Bleu, mashed cauliflower and small salad w/ranch S- 6 slices of pepperoni & 2 oz colby cheese *Asparagus Chicken Cordon Belu- 4 chicken breasts , 1 bunch of fresh asparagus , 1 pack of fresh mushrooms (sliced) , 4 slices of deli thin ham , 4 slices of swiss cheese , Olive oil & butter, seasonings to taste Preheat oven to 350. Put a frying pan on medium high heat and add 3 T olive oil, when heated up place the chicken breasts in and brown both sides, meanwhile, in a sauce pan, bring water to a boil and add asparagus, boil until tender crisp and remove from heat. When chicken is browned, remove from pan, add 2 T butter & sliced mushrooms, saute until tender, remove from heat. Spray a shallow baking dish with Pam and add the chicken breasts, you can add seasonings at this point if you wish (I sprinkle each with salt, pepper and rosemary). Spoon the mushrooms over each chicken and top with asparagus, place a slice of swiss cheese on each and then a slice of ham. Place in preheated oven for 30 minutes or until chicken is cooked through (more time for bigger breasts and less for thinner). These are really good and can go with many different side dishes. You can also flavor them in many different ways, pretty versatile. Leave off the mushrooms if you're not a fan and change the asparagus to a different veggie if you'd like. Have an awesome day all!

The recipe had to be altered lol, I took out pork loin steaks instead of the chicken I meant to and the store was out of asparagus (not paying nearly $4 for a single can either) so I went with the recipe but used the pork chops and omitted the asparagus but it turned out great and super yummy! I wasn't able to eat a whole one so I am saving it for lunch tomorrow.

I am 30 minutes west of Ft Knox.... and I should have posted a recipe for the Mexican chicken, I may have somewhere else but the recipe I use most often now is the following: 4 chicken breasts, taco seasoning (I usually mix garlic, onion, chili, cumin powder, cayenne, dried cilantro & a little salt), Monterey and cheddar cheese (shredded), jalapeņo slices, black olive slices and homemade salsa. Sprinkle the taco seasoning on both sides of chicken and rub it in then brown the chicken breast in a hot pan with butter and a little olive oil, put in a baking dish and sprinkle with a bit more taco seasoning then put jalapeņo & black olive slices on each and sprinkle with about 1/3 c cheese mix on each and bake for about 30 minutes, pull out and top with 2 T salsa and pop back in oven for about 5 more minutes to warm up salsa (350 oven). You can omit anything you don't like and add things you do, most everything I make is pretty versatile. |
