Hey everybody-- I hope you're all doing well...
Let's see-- yesterday I had: Breakfast: Roobios Tea, small piece of ham, water Snack: 2 turkey roll-ups with cream cheese and celery, crystal light (orange) Lunch: 1/2 skillet personal pizza with sausage, ham and mushrooms Snack: pork rinds (salt and vinegar flavor) Crystal Light (orange) Snack: 1/2 skillet personal pizza with sausage, ham and mushrooms Snack: Diet Hansen's Root beer with heavy whipping cream, 1 small orange Jello, water Today: Breakfast: Orange Spice Tea Snack: Tall Americano with Half and Half, Splenda Lunch: Cabboodles and Meat Sauce, Water Snack: Turkey Roll-ups with Swiss cheese (4), Crystal Light Supper: Cabboodles and Meat Sauce, Water Snack: Jello; water

yesterday was a good day! I hope you had one too. I started my day off with a 6 lb loss... I was so happy I literally yelp!
Breakfast was the last slice of my bake french toast with 3 strips of bacon and s/f syrup. Lunch was roasted chicken leg quarter with turnip home fries Dinner was sausage,egg scramble with onions, mushrooms, green peppers and cream cheese. For evening snack I had on Joseph's pita cut and fried into chips, that I dusted in erythritol, cinnamon and cayenne pepper. Yep I was jonesing for something sweet. I have finally broke my basement. I've bounced around at the same low for so long I can't remember but this morning I finally broke it and went below my all time low... Yeah! Vikki |

I don't know if this has been posted elsewhere but i wanted to share..I got a Low Carb Cookbook and its wonderful! It is called 500 Low-Carb Recipes: 500 Recipes from Snacks to Dessert, That the Whole Family Will Love By Dana Carpender
I have been doing low carb for a really long time and i know that it sometimes is frustrating finding different things to eat/new recipes. I hope you all enjoy this book as much as i do Some of the ingredients used you will have to get used to, such as sometimes she calls for almond oil etc.. but im sure you can substitute to your knowledge. |

I think this is it.
Overnight French Toast Ingredients 3 pieces of Laura's Flaxseed Focaccia Bread regular or one of my variations 1/4 cup chopped nuts of choice- in pics I used walnuts 1/4 cup sweetening power- if using plain bread might want to increase slightly 1 cup milk 3-4 lg. eggs 1/2 tsp. vanilla Optional add ins: 1/2 cup berries, orange zest, chayote fried apples, cinnamon, extracts of choice. Method: Spray pie plate or baking dish with cooking spray Cube up flaxbread and toss in pie plate Add nuts and berries if using In a mixing bowl or large measuring cup beat together eggs and milk until eggs are completely incorporated Whisk in vanilla, sweetener and any extracts, flavor or zest you might be using Pour over bread, press down all bread so it's well coated Cover with plastic wrap and pop in fridge over night Next morning set out to come to room temp. and preheat oven to 350 Bake until set or about 30 minutes. Let set up a few minutes before cutting Serve with s/f syrup, fruit sauce or syrup or with warm cream sauce. For Christmas I used my cinnamon flax bread and didn't add any fruit to the french toast, but I made a cranberry syrup by melting down left over cranberry sauce with butter, then spooned that over each slice. Yesterday I used gingerbread flaxbread and added orange zest to custard and cranberries to the pie plate. Both were excellent and so filling it kept me going for hours. |

That's it and if you check out my blog there are more flaxbread recipes and a link to Laura's recipe. It's so good and so so filling. One slice of the bread has 8 grams of fiber.

I'm sorry I didn't see the question about the vinegar water until now.
I add 1/4 cup of unfiltered apple cider vinegar to a 32 oz pitcher of water with just a little sweetener. I drink it because 1 it really tastes good, 2 ACV is suppose to be really good for you, lower blood pressure, cut cravings and it's a really good source of potassium. It does cut my craves, it helps me stay full and it helps me get in my water. |

regarding easy eats:
i coat my fried or baked critters using pulverized pork rinds after rolling them in the egg mixture, into which i have put my spices. if baking in the oven, i spray with plenty of pam. i prefer frying: more messy, but more fun. And/or adding no more than 1 oz per portion of Victoria Marinara sauce (only 4 gr carb per 1/2 cup) plus melted mozzarella on top of the breaded critter. works equally well with unbreaded critters. I also love grilled or sauted veggies with lotsa butter. steamed is so boring. There in a nutshell is my take on EASY EATS. the only thing easier is to have it delivered. Love & Profits: FLATFERENGHI

I've enjoyed reading this thread! I like seeing what others are eating on this journey.
Hopefully, posting will keep me going. I lost 25 pounds earlier this summer and of course, I've gained it..plus 15. I'm just on my 3rd day of starting again. I work nights 3 day a week--so often my "breakfast" is dinner. Here goes- "Breakfast" 9oz sirloin steak 1 cup of broccoli Salad with Bleu cheese dressing Snacks through the night: 2 tablespoons of no sugar added peanut butter 10 raw almonds 1/2 avocado 1/2 cup of cottage cheese with 2 slices of a co-workers orange 5ish Limon pork rinds 2 mugs of mint tea 1 seltzer water 64 oz of water I am trying reallly hard to stop eating between 2am-3am. CoconutMilk-I like the idea of the Vinegar water because my grandmother used to do that back in the day. I think I will try that! |

I hope you enjoy it. I love having it in the fridge. It's a quick and easy breakfast to just pop a piece in the toast oven to reheat. I use Log Cabin s/f syrup. Yesterday Flax Meal hot cereal with pecans, hood milk and butter Lunch: Roasted Leg quarter veg sticks Dinner Steak (sirloin) lg. Salad sm. cup veggie soup Snacks (throughout the day) cheese stick, Slim Jim (not normally something I eat) boiled egg |

flaxmeal?
Is it ok to have flax meal or flax products during induction? What about the coconut oil.milk? Anyway, I have been doing Atkin's for 2 days now and i still feel pretty lethargic and the headaches are not fun..But i have faith that they will go away as ive done this diet before.
Menu: Breakfast: Sausage and egg Snack: Cucumber slices and some pork rinds Lunch: Turkey patty with small slice cheese, small strip of chicken, spinach salad with ranch dressing snack: 2 small slice of cheddar cheese Dinner: Sausage, eggs, bacon and it took all my strength to eat all that as im still feeling weak and nauseous until my body adjusts.. Thank you so much, that's so sweet of you. I'm so sorry your having trouble logging on. I'll see if I can figure out why. Cali, Yes small amounts (2 tbsp. or so) of flax are ok on induction as is coconut oil. When I first switched to lc I had flu symptoms and was sick for about 2 days, but the headaches lasted a good 4-5 days. After that I was flying I felt so alive and energized. It's just your body adjusting to it's new fuel source and unfortunately it take a good week to do so. If after that your still not feeling well, you might be one of those folks that has to have a few more carbs to function well. I'm one of those. I ended up doing induction at about 30 nc and now aim for 35-50 nc. I average about 40 or so. Good luck and stick with it, it's worth it. |
