I am down 2 pounds this week to my lowest weight in 12 years! ![]() Here's my menu for today: 9/13/08 B- 1 sausage patty (just wasn't very hungry) S- 3 slices of bacon L- 6 mini Fritatas (reheated) and a small salad w/ranch S- SF pudding D- leftovers- LC meatloaf, green bean casserole and mock mashed taters (all LC) S- 2oz of nuts, 2 oz of cheddar cheese Have an awesome LC day guys! |

I had a sleep study done yesterday so my last two days have been a little out of wack, even for me.
But I was up by 6am today so at least I was on a normal schedule to start the day. Breakfast: 2 scrambled eggs, 2 pieces of sausage, 2 dollar sized low carb pancakes with syrup Heaven on a plate snack: 1 cup of pop corn ( I know I shouldn't have but I did measure and it was just one cup) ![]() Lunch: Tuna noodles, made with dream field. Not something I normally have, but Sister made it for me Dinner: Cheese burger salad with rich and creamy ranch dressing Vikki |

Afternoon all!
Been crazy around here... we had a massive wind storm yesterday with lots of damage so I did not get my menu posted... I'll do it with today's though. Hope everyone is doing great today and staying on track!9/14/08 B- 1/4 lb slicled turkey, 1/4 lb colby cheese, mayo S- 1/4c cinnamon nuts L- none (middle of storm lol) S- small salad D- LC Green Bean casserole, left over LC meatloaf, 3 LC deviled eggs S- 3 SF toffees 9/15/08 B- 2 boiled eggs S- none L- Asapargus steak roll-ups, small salad S- 1/4c almonds D- LC Pizza, small salad S- SF fudge pop I just realized I never put my drinks down... I always drink water (I try for 100oz a day but don't always make it)... if I have anything else it is the occasional unsweet ice tea. I have always been a big water drinker and am lucky that I did not ever drink soda so it was not something I had to break free of but I do know there are lots of substitutes out there for those of you who can't do without! ![]() Well that's it for today. Well my day was really really long and I was out all day and most of my plans fell off like crazy. But I don't think I did too badly.
Meal 1:I got up about 11:30 pm and had 2 pieces of fried chicken ( my low carb version) cold out of the fridge, with cucumber,onion and tomato salad and a slice of cantaloupe snack: around 6:30 am I had a couple pieces of salami Meal 2: 1pm This was where things went all wrong; lunch didn't happen like it was suppose to and I was out so I grabbed a small burger from a local drive through, problem was no oopsies, and had to eat in the car on the way somewhere else so I ended up eating the bun ![]() Meal 3: 5:30 pm salad and chili lime steak I had bout a gallon of vinegar water and a diet dr. pepper with my burger. All in all not bad, it wasn't an awful day, but it was very long and I hate I ate the bun. But like Scarlet says " Tomorrow in another Day" Last edited by coconutmilk; 09-18-2008 at 04:15 AM.. |

just wondering how much ACV do you put in a gallon of water? and do you think flavored water (zero carbs/sugar) count? I mean can i use the individual packets of stuff to help me get the water in or does it have to be plain water? just wondering

Hey guys! Sorry I didn't post yesterday just been really busy.
I can understand the eating out alot thing, we used to do that too. Plus my old job I travelled alot so I had to eat out but there are things you can do. I would order a salad (usually something with meat) and have the dressing on the side (I'd always order ranch because it is usually the lowest in the carbs). At most restaurants you can order what you like so choose meats and veggies or hit the salad bar (if they have one).... at fast food chains try for non breaded items or order burgers plain and get the mustard or mayo on the side so you can ditch the bread and dip the meat... most fast food chains also offer salads so that makes it easier too. ![]() 9/18/08 B- 3 slices of bacon S- none L- 1/4 lb turkey sliced, 1/4 lb colby cheese, mayo S- SF pudding D- Cheeseburger, small salad S- 3 Turkey rollups I might not be posting as much next week, we are moving and that will take up alot of my time but I will try to get in here as much as I can. I put about 1/2 cup Braggs, unfiltered ACV in a gallon of water with a little sweetzfree. I really like the taste and it helps me stay off diet soft drinks. I do count it as my water for the day. Everyone seems to have their on take on it, but I figure if it doesn't have caffeine in it, it counts are part of my water. I also try to avoid food dyes powdered mixes like Crystal Light (which I avoid due to the aspertame anyway) but that's a personal thing. Food dyes scare me a little so I avoid them all I can. Back pre-low carb all winter I drank hot water with honey and ACV. It really helped keep colds away, besides it tasted so good. If your not fond of the flavor you can always use less. |

I understand the eating out thing too, it's really easy to get in the habit during the summer when it's to hot to cook. What I've done to help me is plan one night a week as either a set down restaurant meal or take out. One night of what I call grazing night, everyone reheats what ever left overs they want. BTW I plan for grazing night by make a little extra of everything, that covers lunchs and our Friday night graze. That gives me two nights right there that I don't have to cook. Then I do double cooking to help save other nights. Anyway, it works for me. I love to cook but with some of the health issues I have, I'm not always able and these plans make sure we stay on plan even if I can't cook that night.

Morning all!
Sorry I have been MIA... we still aren't in our house, grrrrrr, just one thing after another! Here is yesterday's menu. 9/24/08 B- Pork tenderloin, 1 egg, 1 slice of deluxe american cheese S- 3 slices of bacon L- *LC chili, small salad with Three cheese italian dressing S- 2 oz deluxe mixed nuts D- *LC Pork Barbecue Sandwich S- 2 oz cheddar cheese & 2 sausage sticks *LC chili- Brown 2 lbs ground beef in dutch oven along with 1 small onion, 1 green pepper and 2 celery sticks (all chopped). When done drain well and put back into pot. Add 2 whole tomatoes (chopped), 3 cups water, and spices to taste (mine were chili powder, cumin, garlic powder, onion powder, red pepper flakes, salt & pepper). Bring to a boil and then turn down to a simmer for an hour (let's all the flavors blend). After an hour, I took a potato masher and mashed it down a bit (to make the beef really fine) and then brought to a boil for about 30 minutes to thicken a bit. Turned out really good and the family barely missed the beans. ![]() *LC Pork Barbecue- place a 3 lb pork butt roast in a roasting pan along with my sauce (2 cups water, 3/4 c LC brown sugar, 2T liquid smoke, 2T worcestershire sauce, 2T dry onion flakes, 1T each onion powder, garlic powder, chili powder, seasoned salt and pepper, 3T apple cider vinegar, 3T SF maple syrup and 3T yellow mustard. Whisk together very well.) Cover with foil and bake in a 300 degree oven for 4 to 5 hours or until very tender. Take out of oven and using 2 forks, pull all the meat apart into small strips/bite size pieces. I then leave it sitting in the juices for another hour so it can soak more of that flavor up. Use a slotted spoon to drain and put into a bowl to serve from. I put mine on LC bread. I buy Healthy Life bread at Kroger's, it has 5 net carb per slice and is very good. ![]() Have an awesome day and I will come back to post today's menu when I decide exactly what it will be, lol. |

![]() My menu for today: late breakfast: egg creme lunch: I wasnt real hungry to some chicken, lettuce and sourcream w/cheese dinner: will be grilled porkchops and maybe some loaded broccoli dessert: 3 tbsp of sf cool whip with a little bit of peanut butter mixed together YUM! Of course I am trying to drink a lot of water, so I feel like I am having to pee every 37 seconds...oh well...maybe the triplets will get the idea and potty train while I do this yeah right ![]() have a great day ladies!

Thanks Wendalina.... it's important to me to keep my food interesting but easy, with a 3 y.o. tornado I don't have a lot of time to put into it but it is so important to me to lose this weight.

Good Morning all! Doing ok this week... better eating just still not perfect (yes I am a bit of a perfectionist lol) We have alot of running to do today so I thought I'd better get my menu in now lol...
B- 1 sausage patty, 1 fried egg, 1 slice deluxe american and a thin slice of tomato S- 2 string cheese sticks L- grilled chicken salad S- 2 sausage sticks and 2 oz deluxe mixed nuts D- Swiss Patty Melt (burger, swiss cheese and thin slice of onion grilled), small salad w/4 cucumber slices, bacon bits, 1/4 c shredded cheese and ranch S- 1 turkey roll-up (1 slice deli turkey, 1 slice deluxe american, 1 lettuce leaf & mayo) That's it for today. I plan on trying on some new 3 ingredient meals in the next few days and if they are good I will start posting them here... One that sounded really good was a chicken roulade (just bonless chicken, swiss & a veggie like asparagus or green onions) rolled up and browned then popped in the oven... yum-O! Hi all!
Sorry I haven't posted in awhile... life kind of got in the way, as it tends to do, lol. I now have a bit more free time so I can get myself re-motivated and back to posting meals and such. I am also going to start working on some new "easy meal" ideas, I know I brought up the subject of 3 ingredient meals and I have not fogotten them! I have found a couple that I (and my family) really enjoy::: The first is a simple Roulade, you can use pretty much any meat/cheese variety and one veggie of your choice, then brown it/cook it on the stove top or pop it in the oven.... some of my favs have been : Chicken breast, swiss cheese and asparagus - breakfast (minute) steak, sharp cheddar and broccoli (chopped) - Ham, swiss and mushrooms - You can see how easy it is to just mix this recipe up and pretty much make it your own! When I use chicken breast or steaks or pork chops, I always use the boneless kind and I pound them thin/flat. If they are too thick you can butterfly them or just slice all the way through (then you have two! lol) and then pound them flat. The cheses seem to work better if I use shredded or slice it very, very thin. For seasoning you can use anything you like, I really like the Mrs. Dash line because they have many spices mixed up for you already (takes out the guess work). I also love Kabobs or skewers, very easy to assemble, cook quick and are tasty. Obviously these are best in the summer but you can enjoy then anytime of the year if you have an indoor grill or grill pan. Mine contain two veggies and a meat and I don't usually marinade them but you can, just make your own (stay away from the store bought ones, too much sugar). Again I like these but you can use any combos you like::: steak, zucchini, cauliflower - chicken, yellow squash, red pepper - thick pork chop, cauliflower, mushroom - ham, asparagus, onion Just a note, always use the fresh veggies because frozen will not hold up to the grilling process and spray your pan/grill to keep everything from sticking. I know this post is long but it has been awhile so I thought I'd pop a little extra into it. I'll start posting menus again tomorrow and have an awesome day everyone! |

This was very helpful. I started on Monday 1/5/09 and I have 90 pounds to lose. That sounds so overwhelming. How much have you lost? How quickly? Did you do it all naturally? Just curious as to if you can give me any insight as to your struggles in the first month and how to stay out of the kitchen when I'm alone or bored. It's a habit----it's late night and everyone is sleeping and I keep heading there on commercials. I am driving myself crazy!! I am going to be 40, however, in August and it gives me 8 months to turn 40 with a healthy body. Any help anyone can give me is super!!! Thanks!!

I am not sure what plan you are doing - I am doing just general low carb. Kind of an Atkins/South Beach mix. But for snacks - I love: Deviled Eggs pepperoni w/cheese chunks string cheese w/nuts apple w/peanut butter red bell peppers cut up and dipped in sun dried tomato hummus! YUM!!!! pork rines with french onion dip loaded broccoli is AWESOME! You get the idea. If I can help in any way just let me know! Its great to post menus and snacks on here, but if you need to vent as well ~ vent away! Wendy |

Not posted in forever but I'm back
Well I've not posted in forever but here goes.
I made baked french toast yesterday and had another slice this morning for breakfast along with a couple strips of bacon. For lunch I kind of forgot to eat... not feeling particular well today just getting over a brochial infection For dinner I had Cabbage soup with sausage I also ate half a ChocoPerfection bar. I drank water, iced tea and diet Dr. Pepper Now I've just got to remember to update everyday! Take care and enjoy your life as you live it Vikki |

I now have it down to 119 lbs... that's pretty awesome but I do it by focusing on 10 pound increments. I make a goal and then go for it... if I don't make it I just reset my goal and keep going, no self-pity or "whoopings" if it doesn't happen like I planned I just try again. I did mine all naturally, and plan to do it all that way but I have nothing against the surgeries, I'm just a big baby... losing it normally is painful enough! It can be very hard to stay focused and we all fall off the wagon now and then, don't dwell on it, just think about "why" ti happened and try to make a gameplan around it so that maybe next time, you can avoid that particular pitfall. My weakness has always been late night snacking, I solved it by going to bed earlier... lol But like Wendalina said, always have those LC snacks made up ahead of time and handy so if you must snack it's LC.
