Wow Erica, are you does to a size 3/4 in 17 weeks? That is amazing. i have been a 14 for so long, I didn't really expect that I could get that low again.

Hi all! Sorry I have bee MIA again... just having a hard time sticking to plan and just with other things going on... anyhow, got on the scale today and just about had a heart attack... I have GOT to get my rear back in gear and get serious about this... so I am back and am hoping for good! Menu for today follows... have an awesome night all and hope more join me back soon! *hugs*
11-09 B- 2 eggs (scrambled w/various spices), 1 slice of ham (approx. 3oz) S- 4 slices of summer sausage(2oz) & 4 slices of cheddar cheese (2oz) L- Mixed green salad(1 1/2c) w/ chopped ham (approx. 1/2 c), 2 T ranch S- none D- Fried Cabbage* S- none *Fried Cabbage- Take 1 large head of cabbage & half of an onion, chop them in large chunks, take 1 pound of bacon (check sugar content) chop this and put in a large dutch oven type pan on high heat, fry up the bacon (I like mine soft but you can fry it to be crispy if desired)... once bacon is cooked how you like it, add the cabbage (may have to do it in stages) and cook until soft. Again this is all about how you like it, if you want crisper cabbage just cook it to wilt and soften slightly. ![]() Thanks all and hope to hear from you all soon!

Hey Erica! That stuffed avocado sounds divine! I never thought of doing that.. I usually just use them in stuff but yum!
All right, Thanksgiving is right around the corner.... has anyone thought about their menus? I am working on mine, I know that planning ahead will be the best step for me, I can make my low carb items along with a few "regular" things for the family... I believe I will do my low carb green bean casserole (this is all from scratch), mashed cheesy cauliflower, low carb stuffing (no bread), Parmesan Roasted Veggies (Broccoli, Eggplant, Zucchini, red peppers and onion), and then for the family - Cornbread stuffing & mashed potatoes - I am also making a turkey but I am checking out different recipes to find a "new" flavor this year, if you have any good recipes for turkey please share... for desert we're having the normal pumpkin pie, my LC white chocolate pie and maybe mini pumpkin cheesecakes ... I will have to work from 3:00am to 8:00am but I am hoping to have alot of this prepped and at least half cooked a day or two before... I can have hubby pop the turkey in the oven for me and we should be golden! ![]() So how about it? What is your Thanksgiving Day menu looking like? |
