Everything went great! We walked in, she found her name, hung up her backpack and I asked her if I could have a hug, she stood there thinking about it and smiled & shook her head no and went over to her seat! Little monster! It's all good, I am very happy she went with no problems and I don't have to worry about her not having a good day.

Thanks for the & the lol they were both appreciated. Now my husband, he's not doing as well! But he will get used to her being away and in school too. lol


8-17-09

B- 2 scrambled eggs
S- 3 oz beef sticks (cut into bite sized pieces) & 1/4 c mixed nuts
L- not sure yet, we are going out for lunch so will revise later
S- 2 LC deviled eggs
D- grilled hamburger, grilled stuffed zucchini & a small salad with ranch, tomato & cucumber
S- 2 cheese sticks


Grilled Stuffed Zucchini-
(stuffed with mozzarella, parmesan, diced onion, green peppers, mushrooms, garlic and spinach , I use 1 or 2 eggs to help bind this together plus my favorite seasonings, Italian herbs are fantastic with this)
Just slice the zucchini lengthwise & use a spoon or melon baller to scoop out the seeds, I brush olive oil on mine and lay it on the grill cut side down for about 5 minutes or 10 minutes to get some nice grill marks/flavor, then stuff it and put in back on the grill for a good 15 to 20 minutes, you can place it on some foil to keep your grill from getting too messy. This is super yummy and you can stuff them with just about anything you like!

Vicki!! Glad you found us, we always love to have more people join us. I love seeing everyones menus, I get a lot of good ideas from other people.

Wow, that is next to nothing One thing that is nice about this woe is there isn't any physical hunger, at least not for me. Of course, I do tend to snack between meals which isn't good which may also explain the reason I don't experience hunger It is head hunger mostly or boredom that I eat when I shouldn't.

Breakfast: Hebrew National hot dog And a G2 gatorade ( not very low carb but my blood sugar dropped so low I almost fainted so I had to grab it)

Lunch: Low carb pizza on the all cheese crust

Dinner: Cube steak with golden onion soup over the top

Okay the cast came off today ...... Looks nasty but at least I can move it now.

Hey all! Working different shift the next 2 days so my schedule (internal) is all off, lol! Used to my 3 - 11 am shift but having to work 8-4 pm and it's a major shock to the system.

Hey everyone -- I'm sorry I haven't been posting-- I've been caught in a whirlwind of busyness. Went to Cheesecake factory last night with friends and had a Factory Burger, no fries, side salad, mayo and mustard. I had to dump the mustard because I think they put honey in it. Grrrr.

Yesterday's menu:

Breakfast: 1 cup coffee/cream/splenda

Lunch: broiled catfish and jumbo shrimp

snack: Chicharonnes/ rest of broiled catfish

Dinner: Factory Burger, no fries, side salad, mayo

Today:

Breakfast: 1 cup coffee/cream/splenda

Lunch: 1 med ground pork burger with mild cheddar cheese

Snack: Pork Rinds, about 10-15

Dinner: 1 med ground pork burger with mild cheddar cheese

Snack: Iced Coffee/cream/splenda (was at the bar w friends)

I may have snack later tonight, after drinking a lot more water. If still hungry, I may have a fried egg. Or maybe just a slice of Swiss Cheese

I am new to the boards and have tried time and time again to do low carb but struggle with menus. Everything sounds great and so simple to do. Would the recipes you are posting be considered induction? For the most part from my basic knowledge they do sound like they would be. Thanks so much for helping us newbies out. This makes it seem doable for a change!

I'm a simple no fuss gal too! I have a 3 y.o. DD and a 13 y.o. DD and I almost never have enough time to make "elaborate" or time consuming meals. What I post is what I eat, pretty much on a daily basis. I do keep staples around and those are:

(Frozen) broccoli, cauliflower, peppers, green beans, and different mixed veggies
Dairy- heavy cream, butter, eggs, cheddar, swiss, mozzarella, colby, cream and deluxe american cheeses
Spices- Love Mrs. Dash there are just so many to choose from! , salt, pepper, dried minced onions, onion powder, garlic powder, red pepper flakes, cumin, cilantro, sage, thyme, and tons more I can't think of just now... just read the labels and make sure what you buy doesn't have any added sugar

Generally I take what I always loved to eat and make it in a LC way... I also look through the recipes here and then add or change them to my taste. One thing I do is make stuff ahead... when I go to the grocery store, I come home and clean, sort and bag or put into containers things that I need for the week. I will make some cream cheese spread up ahead of time, pack salad servings into bowls, make some beef, ham & turkey rollups and keep them in containers... I try to plan ahead on my menus too so I have an idea of what I am going to eat.. seems to help me from eating off plan (uh... most of the time, lol) I usually fry up a bunch of hamburger and then divide it into 1 pound servings and refreeze it, that way when I make something with it, it's already cooked and takes no time at all to "reheat" and add to dinner.

When you cook the hamburger meat and refreeze it is it dry when you heat it up? Do you put it in the microwave or let defrost in the refrigerator? Thanks for all the helpful tips.

The thing I'm looking forward to is actually getting more exercise, because I'll actually get out and walk, ride my bike, etc, ....I just turn into slug-woman when it's too hot. I'm really sensitive to heat-- it makes me feel sick.

Okay, yesterday--I pigged out.

Breakfast:
3 scrambled eggs and 3 steak-umms slices, fried, coffee/cream/splenda (2)

Snack: 1 oz Mexican Frying Cheese

Snack: small Handful of pork rinds

Dinner: 2 small pieces Red Bell Pepper and Mushroom Pizza (Cleo's Zucchini Pizza crust)

Snack: large serving cinnamon pork rinds with butter and splenda

Snack: ricotta with Orange DaVinci syrup, Cinnamon, ginger, & nutmeg

Lots and lots of water
