Hiya Erica! How ya doing? Had sort of a good day, no cheating but did not have time to eat much either so... I would rather have a day where I get my full 3 meals and 3 snacks in, I always seem to lose better when I do. I weighed this morning and am down to 281, YAY!!!

So, I was experimenting last night with cream cheese and different flavors and such and I decided to try a little crystal light in it. I figured it was presweetend with zero carbs so why not and OMG, it was so good. I tried the orange and the raspberry and they were both good and I dipped them with pork rinds (which was a good way to eat them). I had my mom taste test too and she liked them also, so if you are looking for new flavors you might consider something like that.


7-30-09

B- none
S- 2 sausage sticks cut in chunks
L- 8 lil smokies
S- none
D- taco salad w/ranch dressing (no shell)
S- 2 T cream cheese flavored w/ raspberry Crystal light and a handful of pork rinds

My taco salad is hamburger w/taco seasoning (my seasoning, not store bought), on a bed of lettuce and topped with shredded cheese, 2 small cherry tomatoes (chopped) and 1 T sour cream

When I first started LC I found Linda Sue's website and printed a few recipes I thought would help us out, get through the "I don't want to FEEL like I'm dieting" times. Know what I mean? This was one of the dessert recipes on Linda Sue's site. I have to say, it is very, very tasty. We had my mom and sister over for dinner last Saturday night and my DP talked me into serving this ONLY for dessert! Scandalous isn't it? But it worked, and they absolutely loved it. Below is Linda Sue's recipe and I've noted my changes, albeit minimal. Thanks again Linda Sue-this is a keeper!

Cheesecake Pudding

1 Cup Heavy Cream, Whipped
8 Oz. Cream Cheese, softened
8 Oz. Sour Cream
3/4 Cup granular Splenda, or equivalent liquid Splenda
2 tsp. Vanilla
Fruit, not included in counts

Beat the cream cheese, sour cream, Splenda and vanilla until smooth. fold in the whipped cream, serve with fruit if desired.

6 Servings: 7 net carbs (granular Splenda) or 4 net carbs (liquid Splenda)

The only changes I made were the (1) use of low fat cream cheese, (2) an extra teaspoon or two of Vanilla (love the stuff) (3) about a Tablespoon of fresh lemon zest, and (4) some chocolate shavings on top. I like the taste of cheesecake, and the lemon really brought it out, but it didn't taste "lemon-y" at all.

I filled a pastry bag with this lucious pudding and piped it into some pretty, etched glasses, so you could see the fruit on the bottom. It presented really well and impressed the family.

I made two different fruit concoctions to go on the bottom of the dessert, here they are:

Strawberry

1 Cup of chopped fresh strawberries
1 tsp + Splenda
1 + Tbsp Sugar Free Smuckers Strawberry Jam

Mix together- simple as that.

Triple Berry

1 Cup of frozen (or fresh) mixed berries
1/4 Cup of water (I used blackberry wine, was excellent)
1/4 Cup of Splenda

Mix and bring to a light boil. Turn off the flame and mix. Lightly smashing most berries. Turn flame back on low for a couple of minutes to combine.

For the garnish, I grated an 85% Cocoa bar and sprinkeled about a teaspoon on the top, then stuck one little square in.

Hey, it was a birthday, so this was a "splurge" without a lot of guilt!

OMG that sounds delicious Erica! I am going to have to try that. We have blackberries almost ripe out there so I am going to try it with some fresh blackberries on the bottom.

Had a good day today, no cheats so there is a HUGE bonus! Here's my menu for yesterday and today:::

7-31-09

B- 5 slices of bacon
S- handful of almonds
L- handful of almonds & SF Jello pudding
S- 2 boiled eggs and 3 oz pepperoni
D- Spinach stuffed Chicken Breast* & green beans
S- 2 SF chocolate candies

8-1-09

B- pork tenderloin, slice if tomato & 1 smoked sausage link (about 3 oz each)
S- SF Jello pudding
L- 4 Jalapeno poppers (no breading) & Cinnamon Cream cheese w/pork rinds
S- small salad w/ ranch, bacon bits & 1/4 c shredded cheddar
D- bacon cheese burger, lettuce, dill pickles, mayo and bacon wrapped poppers
S- 4 Beef rollups (w/cream cheese)


* Spinach Stuffed Chicken Breast
4 boneless chicken breasts, 1 box frozen spinach, 1 c shredded mozzarella, 1/2 c shredded parmesan, 2 eggs (beaten), 3 T heavy cream and your choice of spices
Butterfly the chicken and pound out fairly flat, squeeze liquid from spinach and mix together with the rest of the ingredients (I chose to add seasoning salt, smoked paprika and dill to mine). Once mixed place about 1/2 to 3/4 c on chicken and roll up, secure with a toothpick, if necessary and sprinkle spices on top also. Place in a baking dish with 1 c water and cover with foil. Pop into a 385 degree oven for 45 to 50 minutes or until chicken is cooked through.

It does sound good doesn't it Kim? I can't wait! Good but long day at work and again, cheat free! I should start keeping count, maybe that would be a good incentive for me. I even turned down fresh baked chocolate chip cookies this morning (couldn't believe they offered them to me knowing I am low carbing but whatcha gonna do?).

Congrats on the cheat free day.

I LOVE Blackberries, especially this time of the year.


Gotta have blood work done Tuesday, potassium level for my surgery Thursday. SO for the next couple days I will be adding a banana and lots of broccoli.
RH- 3 trigger fingers, carpal tunnel and DeQuervian tendonotis.
So after Wednesday, my posting may slow down a bit, but, I will be reading and post when I can.


Monday

B- Hot tea
S- Banana
L- Roasting a chicken on the grill. either leftover green beans or broccoli
S- Sugar Free jello or pudding cup
D- Roasted chicken and either the greenbeans or the broccoli, whichever one I did not have for lunch.

Might add in another banana.

Not to worried about the bananas, after a few I get a bit sick of them. So by Tuesday morning I will have had enough.

I am just starting and was wondering if most of your menus would work for induction?

I haven't done all my research yet but wanted to go ahead and jump in, so I'm not sure what makes things not induction-able (heh).

Hi Wendy and WELCOME!!

Yes most of my menus are good for induction, mainly because I try to keep my carbs on the lower end (I suffer from IBS and carbs are my main trigger)... that being said, stay away from the SF candy and Jello and such until after induction and maybe for the first month or so, just to make sure the "sugar cravings" are gone. Some people find they can't have them at all but you will just have to try and see what works for you. You definitely want to watch your carb counts on your cheese and the heavy cream and veggies. Mostly onions, peppers and tomatoes which have a little higher carb count. I am by no means an expert here, my menus are designed for me by what is easy, low fuss and to my taste. I am glad you think they sound appetizing though, lol, and I hope they give you and others some "ideas" for what to eat and maybe to create something even better using my ideas and the ideas of others who post.


Menu for today:::

8-3-09

B- Beef stick
S- none
L- none
S- none (we were shopping and really did not stop for anything)
D- Big Chef salad w/ turkey, ham, shredded cheese, diced boiled egg, 4 strips of green peppers, 4 quarters of a small tomato, 5 slices of cucumber and ranch dressing, also had 1/2 c cottage cheese (full fat of course)

I tend to not eat alot of cottage cheese and I read the label to find the lowest carb count possible but I do love it! Besides, I could be eating worse things, LOL!
We did a lot of walking today while school shopping and I am wore out! I have one going into preschool and one going into high school so we did a lot of shopping and MAN prices are just getting crazy! We spent $600 and these kids really did not get a whole lot of clothing, big bummer, but at least they are both set for awhile.
Ok gonna run for now, Wendy I hope you post often and please feel free to use anyone's ideas here and don't be shy about asking someone for a recipe that's why we are here! Have a great night all!

OH I forgot to add that I was down another pound today, down to 280, YAY! That's 7 pounds in a week, since restarting, not too shabby.

Here's mine for the last two days...

Yesterday was-- interesting. I was *really* hungry for some reason. So yesterday's menu was:

Breakfast: 4 baked chix drumsticks, Coffee, cream, Splenda
Snack: Coffee, cream, Splenda, Pork Rinds
Lunch: 4 baked chix drumsticks
Snack: leftover Pork Roast with cheese
Snack: 5 baked chix drumsticks, Hansen's Diet Ginger Ale
Drank water with cut up lemons all day and at band practice.

Today:
Breakfast: Coffee, cream, Splenda
Lunch: Pork Carnitas
Snack: Pork Rinds
Snack: Unsweetened Green Tea
Dinner: I'm not very hungry. I may snack on more of the carnitas.

Surfdol --- school shopping . I have a 17 y/o stepson. We give him money and send him to his shopping. He thinks everything has to be a name brand !

Welcome eggshell! Sure you can join in, the more the merrier! (LOL Jinx Kim!)

Going to have a busy evening, my oldest DD is starting high school and her orientation is all day today and then we parents have to go back at 6:00 and we'll be there for around 2 hours so... *sigh* long night. This kind of thing is always hard on me because of my work. I have to get up at 2:00 to be to work by 2:30am so getting home at 8:30 or 9 takes a toll lol, not as young as I used to be!

Menu for today:::

B- 1 egg, 2 sausage patties and 1 slice deluxe American cheese
S- (finished breakfast)
L- 3 oz ribeye steak w/ 1/4 cup grilled onions & 3 oz swiss cheese melted on top (yum!)
S- 1 beef stick
D- Pulled pork, cheesy broccoli and a small salad (pulled pork is my LC recipe)
S- not sure I will have time for one tonight

Hey guys and gals!! I haven't been in here forever!! I need to go back to low carb so here I am!!! lol This is my menu for today.

Lunch: 3 deviled eggs with bacon

Dinner: 2 pieces of Tilapia with butter and garlic in a foil pouch

Trying to stick to 0-5 carbs a day.

Hey AmberNikki! Welcome back!

Hint taken Kim, here is the recipe I posted before, for those who may have missed it. If you love barbecue and pulled pork in particular this is a great one and you can adjust the seasonings to your taste.

*LC Pork Barbecue- place a 3 lb pork butt roast in a roasting pan along with my sauce (2 cups water, 3/4 c LC brown sugar, 2T liquid smoke, 2T worcestershire sauce, 2T dry onion flakes, 1T each onion powder, garlic powder, chili powder, seasoned salt and pepper, 3T apple cider vinegar, 3T SF maple syrup and 3T yellow mustard. Whisk together very well.) Cover with foil and bake in a 300 degree oven for 4 to 5 hours or until very tender. Take out of oven and using 2 forks, pull all the meat apart into small strips/bite size pieces. I then leave it sitting in the juices for another hour so it can soak more of that flavor up. Use a slotted spoon to drain and put into a bowl to serve from. I put mine on LC bread. I buy Healthy Life bread at Kroger's, it has 5 net carb per slice and is very good.*

First day!

Ok, today was my first day, so in the attempt to keep myself on track, here's today's menu. I'd appreciate any input since I'm just learning the ropes.

B: 3 pieces of bacon, 2 ounces (maybe) of cheddar.
L: Salad w/ romaine, cheese, onions & balsamic.
D: I'll probably have celery & tuna salad.

All I drink is water.

Tuesdays are a hectic day for me, so this is probably a little lighter than I'd usually eat.

Is my mind in the right place?

Sounds good to me Wendy! I love LC tuna salad I also make ham and chicken salad with the same basic recipe. If you get hungry though don't go without eating something more... maybe another salad or more protein. Try to keep lots of LC snacks on hand too, like cut up veggies, LC deviled eggs, one of my favs is cream cheese roll ups. I posted a recipe for this on page 1 or 2, they are great, easy to make and good for a quick snack!

Here's my menu for yesterday and today...

Yesterday:
Breakfast: Coffee, Cream, Splenda
Snack: Coffee, Cream, Splenda
Lunch: 2 Asian Burgers with Gouda Cheese
Snack: 1 bag Chicharonnes
Snack: 1 Iced Americano at the bar
Snack: 4 baked chicken drumsticks, with Parmesan, Diet Hansen's Ginger Ale

Today:
Breakfast:2 Coffee, Cream, Splenda, 5 pieces bacon, 2 small burgers stuffed with Blue Cheese and bacon, topped with Smoked Gouda

Snack: cucumberwiches (sliced, stuffed with cream cheese, about a tablespoon ttl)

Lunch: Large Bacon , mushroom and Blue Cheese burger topped with Smoked Gouda Cheese

Snack: Iced Green Tea with lemon

Dinner: Pot Roast, Iced Green Tea with lemon, Sliced sauteed Mushrooms 1/4 cup

Hello, Ladies

For me today.

B- nothing
S- banana (surgery tomorrow)
L- grilled chicken salad w/ranch and fresh tomatoes
S- 2 SF cookies
D- tuna salad with fresh tomatoes,fresh cucumbers and Dukes Mayo. Maybe cottage chesse if I am really hungry.


Keep posting ladies, I will be having my surgery tomorrow,won't be able to type for awhile. Will try using my left hand. But I will be reading.
Printed out Sufdols recipe and have it laying there so DH can fix it for me.
