Hi KimLou and everyone! How are the WV rds with all the rain. I feel like we're drowing here in VA but the roads are still pretty good. Traffic is another thing!
I've been back from WV 3 weeks or so now, but life got in the way and I was too busy to post much. Menu for 6/10: B: shake- gotta stop that, coffee w/ cream L: chicken salad, brancrisp bread, d coke S: d coke D: red cabbage salad, spring mix salad, grilled chicken w/ goat cheese in a mushroom sundried tomato sauce. Simply delish!!! S: tea water, water, water Haven't been tracking my food in fitday. Gotta start but seems like too much effort btw the wedding plans n work. I think though based on wt I've eaten and quantity, its about 1500-1800 calories. Nite nite everyone!

Hi Kimlou,
Thanks for the welcome! Luckily I'm cooking for two, but I know what you mean. Is the Jacksmixtape anything to do with the TV show LOST? Re: sugar alcohol, not sure what contains these but I've found that sticking to things like sugar free jello, atkins bars (the chocolate orange one is my fave and only 1.9g carbs) helps. I read someones signature quote that said that it's not normal to eat sweets as much as we do and we'd be better off just cutting out so much of it altogether (even if artificially sweetened). I agree. I've been so busy the last week getting our flat ready for the market, so skipped some lunches whilst working... Yesterday: B 1 English pork sausage (Porkinsons, mmm) two eggs scrambled w/2 tbl shredded cheddar added at the end of cooking. S 1 portion sugar free jello (Hartleys orange flavor) L Salad with spinach, romaine, radish, garden onion, red bell pepper, home-made vinaigrette, added separately: crumbled feta, chicken breast chunks (previously pan fried to golden). D Leftover salad, minus the chicken and feta, adding some pre-packaged (but freshly made) bean salad mixture, and poached salmon on top. S Atkins chocolate orange bar Drinks San Pellegrino sparkling water, 2 cups tea, each w/2 tbls lacto-free milk (2.5g carbs per 100ml) 2 cappuccinos w/heavy cream Glad to post, looking forward to your next one. |

Today's Menu
B Two eggs scrambled w/2 tbls shredded (white) cheddar, 1 Porkinson's English sausage, 1 cappuccino w/cream
L Atkins bar (I was on the go!) S Cappuccino out and about, and 50g mixture of flax cereal and choconuts (3.5 carbs)--I make these in advance and keep in little bags in freezer for when I'm out. D Salad---40g adzuki beans and 1/2 a carrot both boiled with some garlic and thyme, then cooled, 6 stalks skinny asparagus (roasted in olive oil, salt, and pepper) half a round of goat cheese (rind removed) couple of black olives sliced, mixed salad greens S 1 portion sugar free raspberry jello Drinks: Tea w/2 tbls lacto free milk, 2 cappuccinos, San Pellegrino sparkling water. I hope everyone here is doing well!
So this is going to be quite a busy week. I've been having band practice from 8:30-Midnight for the last two days-- I'm going to be practicing on my own in the mornings before I go to work-- my band is *finally* having the CD release party/show on Saturday. And then we go on tour down to LA next week. I'm having to struggle to stick to legal food, instead of convenience foods. I do think, however that I'm going to stock up on Atkins bars and shakes for this trip-- we're on a time crunch, and it's likely that we'll be living out of 7-11s for the next 6 days. ![]() Well-- my menu yesterday did not go as planned: Here's what I ended up having instead: ![]() My menu: Breakfast: Coffee, H & H , Splenda Lunch: Chopped baked chicken Snack: Coffee, H & H , Splenda Dinner: Cooked shrimp with bacon, pork rinds Snack: Coffee, H & H , Splenda I did not eat after 6pm. No late night snacking. So, today-- Breakfast: Coffee, H & H , Splenda, 3 slices of bacon Lunch: Pork Carnitas, Coffee, H & H , Splenda Dinner: Smoked Salmon, Brie, Pork Cracklins or rinds, Water Snack #1 (at the bar) Iced Coffee or Diet Coke Snack# 2 : SF Jello

Wow, congrats on the band Erica!!! What kind of music? Where can we find it?
Yes, it pays to be prepared for when you're out and about. Also, you might try to find grocery stops instead of 7-Elevens (gosh it's been years since I've seen one of those...). You can always get one of those pre-roasted chickens that they have hot in the store, and/or some string cheese, or macadamia nuts, etc. Todays Menu: B 2 scrambled eggs, w/shredded Gouda this time, 1 English sausage S Cup of Hartley's sugar free strawberry jello L Chicken ceasar salad, mmm. S Extra chicken leftover from lunch S Flax cereal mix w/choco nuts (50g = 3.5g carbs) D Beef burgundy, broccoli Dessert 1/2 of an Atkins orange chocolate bar Drinks: 2 Cappuccinos w/heavy cream, 3 cups water, 2 cups Earl Grey tea w/2tbls lacto free milk |

I miss Mexican food!
The best Huevos Rancheros I ever had was in a little place in Galveston. Not sure if they're there now (since Hurricane Ike).
P.S. Thanks Kimlou, I used to use half and half (they don't have it over here, so I just use something called single, or double cream). Todays Menu: Crappy job of eating today sadly. Our schedules are off because we've put our flat on the market and missed breakfast. Any way, made a lovely French Roast Chicken tonight, mmmmm As usual, got the recipe from Ocado (they deliver my groceries). |

Hey there--
Well, we're what ends up being called Old School Gothic Rock, Batcave, Deathrock or Dark Rock. In other words, we're a bunch of geriatric-- I mean, uhmm, Elder Goths. You can find us here: Legion Within on MySpace Music - Free Streaming MP3s, Pictures & Music Downloads One of the things I've discovered at Trader Joe's are Pot Roast and Pork Carnitas (0 sugar!) already cooked, and boy howdy is it good. I'm planning to take a small cooler, and have a couple of those roasts. Stocking up on Macadamia nuts and string cheese. And of course, pork rinds! ![]() ![]() That should hold me for the time it takes to get to LA. Plus I'm going to boil up half a dozen eggs. I'm going to make an effort to stay away from diet soda, except in the clubs we're playing. (That's all there is that I will drink, other than water.) Quote:

Hey everyone, MIA is back (again)...
I am hoping this is back for good, for me. We have just had the craziest couple years here, but things are calming back down now. Unfortunately I had let my weight creep back up to 287 but I went back to my LC eating 2 days ago and am back down to 284 so yay! I am also reading the South Beach diet book and thinking about switching to that lifestyle. I have been switching from LC to Weight watchers when I stalled out and it worked for awhile but I am really looking for something I can do without as much work (if you know what I mean), but for now I am sticking to just LC until I decide. Have an awesome night all!7-29 B- 5 slices of bacon and 2 boiled eggs S- Pork rinds w/ cream cheese L- 10 Little smokies w/ sautéed veggies S- 2 oz cheese & 2 beef sticks D- BLT chicken w/ranch dressing S- cinnamon cheesecake treat BLT chicken is super easy, just fry 3 slices of bacon to your liking and remove from pan. Add your chicken breast and fry in the bacon grease until done, 7 to 15 mins. depending on thickness and size. Layer a plate with fresh lettuce leaves, place chicken on lettuce and then top with bacon and one thin slice of tomato (if you want). Drizzle ranch dressing over top (about 2 T). Yummy! If you want more, you could steam some cauliflower, mash it with butter heavy cream and cheese. Cinnamon cheesecake treat is basic also (I am sure others have posted similar, if not the same recipes), I just soften cream cheese, add 2 t. of cinnamon, enough heavy cream to be able to stir and add Splenda to your taste. Sometimes I use twin brown sugar, that's good too! You can change it up by adding different SF syrups also.

![]() We are about 30 minutes west of Fort Knox and yes LOTS of rain today but it is just sprinkling on and off now (WHEW). A few times we had just plain old downpours and I had to go drive in that, not fun. Yes I will stay if I do South Beach, I will probably stay more to the protein side of South Beach as I can, I just cannot do the carbs (IBS) and I know it yet I always go back , someday my brain will realize what my body's been saying for YEARS! And thanks for the kudos, I am glad people can use and get ideas from the recipes I have posted/will post. |
