What's for Lunch?

We pack our lunch, and hubby is complaining about cold meat and cheese roll-ups. Besides last night's leftovers, what do you keep on hand to pack for lunches? I'm looking for new ideas beyond leftovers, meat rolls, and Atkins shakes.

Besides leftovers, I like to keep on hand frozen salmon fillets (can't remember the brand name but it has a fishman on the package). I heat them in the microwave at work and put them over a Ceasar salad (romaine, shredded parmesan and dressing). I got this idea from Boston's where they serve a Ceasar's Salmon salad. My version is not a good as their's since they use fresh salmon but for lunch it is a good alternative to the usual.

Other ideas: chicken and tuna salad over greens.

Thanks, Nigel. I swear I searched before I posted. I have this thing about starting new threads-I don't want to reinvent the wheel. However, I cannot for the life of me figure out how to use the search feature effectively. Your help is greatly appreciated!

I understand. I thought there were more threads like this, but that is all that came up. It would be great if we could just have an index of all the threads.

The only way I have any sucess searching is to go to:

Search
Advanced Search
Type in what I am looking for
Then clik on search titles only
Then recipe help and suggestions (forum)
then submit or search (can't recall what is at the bottom of the page)

Tiliapia fillet (pre-package- one-serving) on romaine lettucce, 1/2 sm tomato and 1/4c of red pepper w/Asian silk spritzer.
