My brother is taking me to a Seafood buffet in Indianapolis, so I don't know exactly what is going to be there. I'm sure there will be some LC food there. I am a little leary going to a seafood buffet in Indianapolis. But I'll give it a go.

Pre Breakfast (I popped out early on.) Starbuck's Americano, with SF hazelnut syrup and cream
Breakfast (Or maybe be Hobbit-like and call it Second breakfast) 2 Sausages and a slice of crustless quiche.
Lunch: Fresh salmon poached and sauted veggies with butter.
Chilli con Carne (with extra veggies instead of beans. And wow, was it tasty. And I made double to have some tomorrow.)

^How do you poach salmon? I have salmon that I was planning to grill but maybe poaching would be better.

I just do it on the stove top, in my flat based wok. Today, I sauted some red onion and mushroom in butter, then poured in some stock (I used vegetable stock today, but if you've got some fish stock that's obviously better.) If you use a stock cube don't use a whole one, way too salty. A quarter is enough. You don't want much liquid in the pan, just enough to get some steam going. Bring that to the boil and put the salmon fillet in. Spoon some liquid on the top if you want, then turn the heat right down and cover.

It should take about five minutes and should easily break into large flakes. You can drain the liquid off if you want to have salad with it, though have the onion and mushroom of course. Or reduce the liquid, maybe add some cream to make a sauce, if you're having it with hot veggies. (I had mine today with cabbage and leek.)
