Gourmet Meatloaf Dinner

Here's what I made for dinner tonight.

There's ground beef, carb free italian sausage, beaten egg, 2 tbs cream, 1/4 cup parmesean, 2 tbs Roasted Red Pepper Spread from Trader Joe's, salt, pepper, Pasta Seasoning Blend, sugar free ketchup all wrapped up in bacon. It cooked for half an hour at 425 in a cast iron skillet placed in the center of the oven. I'm not sure of the carb count per serving but I eat this every other month or so and I stay in ketosis just fine even if I add a stripe or two of SF ketchup to it at the table. There can't be many carbs in the whole loaf and it makes a lot of servings. I'll figure it out if anyone wants to know.

I wanted make it in an oversized muffin tin so I could "frost" it with blended cauliflower and cream cheese to make it whimsical like a cupcake, but my muffin tin was packed up.[IMG][/IMG]

I ate 3 carne asada burritos today, with extra pico de gallo and guac, and roasted chili salsa, only 1/4 of the tortilla used. Damn I could eat those all day every day.
