Greek Style Chicken Salad
Makes 4 servings
1 pound cooked chicken breast halves -- diced -just poach or boil
1/2 cup cucumber -- diced
1/4 cup diced red onion
1/2 cup sliced celery
1/2 cup diced tomato
1/4 cup kalamata olives -- halved and pitted
3/4 cup plain yogurt
1/4 cup cucumber -- grated
2 tablespoons lemon juice
1 tablespoon vinegar
1/2 teaspoon dried dill
1/8 teaspoon garlic powder -- optional
1/8 teaspoon dried oregano -- optional

Mix yogurt, grated cucumber, lemon juce, vinegar, dill, garlic powder and oregano.
Toss all ingredients and refrigerate for 1 hour to blend flavors. Taste for salt and pepper before serving. Serve as is or over shredded lettuce. Sprinkle with feta cheese if desired.

I ate more food when I counted calories. Are you doing low carb? You can eat more you know. That is the beauty of low carbing. You can eat and lose.

Add some tuna to those eggs for lunch and some veges with your chicken for dinner.

Yesterday's menu

Breakfast: Egg sandwich made with Tooters wonderful 3 minute flax bread Coffee w/ cream

Lunch: I ate a piece of CarolynF's strawberry pie with an almond crust and Land O Lakes sf whipped topping (YUM) coffee w/ cream

Dinner: Round steak (cooked in crock pot all day to be tender) mashed cauliflower with steak broth gravy (thickened with guar gum), green beans

too much I'm sure.... have been eating to fight a headache from hades

1/2 half of a horrible Hass avocado
1 oz pistachios
1 oz beef jerky
2 boiled eggs w/ mayo
green pepper strips
coffee w 1/2 & 1/2
water

and its not even lunch time yet

B: Egg omelette w/green pepper, red pepper, celery, fresh chives, fresh parsley, mushrooms and cheese.

It's Pizza Chicken with a Spinach salad.

Dinner: ? thinking maybe salmon with side salad and 1/4 cup of cottage cheese.
snack: ? prob little celery and cream cheese if I am not to tired by then...lol...

exercise: walked/jogged 1 mile this am..... weather is beautiful how could I not!

Not bad (my fav is the muffins) but this is WAY better then any mix recipe I have ever tried. The texture is like a fluffy bread. Sort of like a white fluffy bread with a corn meal taste to it, if that helps. I have made french toast out of this, Sandwiches, Grilled Cheese Sandwiches etc... ENJOY!
