B'fast: 2 eggs, scrambled in 1T coconut oil; coffee Lunch: lentil soup; salad Dinner: taco salad My simple lentil soup recipe -makes 2 decent sized servings with lots of fiber! * Exported from MasterCook * Simple Lentil Soup for Two Recipe By : Dottie Serving Size : 2 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 tablespoons dried lentils 1/4 cup diced onion 1/4 cup diced tomato 1/2 cup diced celery 2 cups chicken broth 1 cup water 1 each salt and pepper to taste 1/4 teaspoon dried oregano 1/4 teaspoon ground cumin Bring water, lentils, onion, tomato and celery to a boil. Reduce heat and simmer 15 minutes then add remaining ingredients and simmer for 30 minutes or uintil lentils are soft. You can add diced bacon or ham at the start, if you like. - - - - - - - - - - - - - - - - - - - Per Serving: 179 Calories; 2g Fat (9.5% calories from fat); 16g Protein; 26g Carbohydrate; 12g Dietary Fiber; 0mg Cholesterol; 800mg Sodium. Today is a weird snack day, I'm at home writing an essay and could eat all day long..

L: shrimp salad lemon water with stevia D: green salsa chicken with faux tatos, cherry tomato and celery S; doctored lc yogurt w/ flax meal, coconut oil, chocolate bark lots of water decaf tea had my tops meeting this am didnt want to eat before weigh in. I broke my 3 week stall lost a pound. Think it was the CC muffins that were stalling me rats I love those things . |

So far, today has been an egg-cellent....
B: 1 jumbo egg omelet with leftover creamed spinach, 2 slices thin bacon, one sausage patty and lc s/f corn muffin-top L: (my own strange mixture, but tasty) Cup of homemade cole slaw mixed with diced hard-boiled eggs, so it's a crunchy egg salad, with Trader Joe's lc tortilla - called Joe's Lo's = only 4 net carbs and 50 calories. S (only if truly hungry) 1 oz Pepitas (roasted pumpkin seeds) D: 2 Dr. Praeger's Tex Mex veggie burger topped with 1 oz shredded cheddar, and some kind of veggie Still can't believe eating like this is allowing me to lose! B- two eggs fried medium well with cheddar cheese on top.
L- grilled chicken with pepperjack cheese melted on top. D- 1 tbs of natural peanut butter, 1 half cup of sauted and drained vension with salsa on top with a small salad with half tomatoe and ranch dressing. Drinks today were 1 20 oz diet coke and about 30 oz of diet green tea and bunches of water. |
