3/18/07- Cooking Ahead

Ooops! Forgot to post this yesterday. Sorry!

So what are we cooking this weekend for the upcoming week? I'm not doing much this weekend as I'll be gone for a couple days during the week. But, I did boil some eggs and I'll be making a batch of Revolution Rolls this morning.

I made a bunch of deviled eggs and making enough cola chicken to last me until Tuesday Oh I may also make some on linda sue's almond flour cookies but I need to go out and buy somethings first

  • I just made a batch of Dixie Carb Counters corn muffins (in muffin tops so I can toast them at work)
  • I diced up lots of chicken so I can make chicken salad
  • and I bought a bag of cole slaw mix which I make up every few days - I use it in my meat/cheese roll-ups to give'm some crunch
  • I also bought a big bag of peanuts and measured out into 1 oz portions and put them in snack bags to bring to work with me)
  • I divided portions of yogurt into reuseable containers (also to bring to work) and I'll add stawberries and toasted pecans when I eat them.

I am finding the key to my success, this time around, is to always be prepared. Sometimes I am so tired at night that I have no desire to prepare my bkfst or lunch, but after I do it I feel good about myself. I also don't like ordering lunch with my co-workers and prepping keeps me on the wagon.

I LOVE Cola Chicken!! In fact, it's on my menu for dinner this week. So easy and so, so good!

My version is:

4 boneless/skinless chicken breasts
12 ounces Diet Rite
1 cup low carb ketchup

Brown chicken on both sides in a large skillet. Combine Diet Rite and LC ketchup and pour over chicken. Simmer for 20-25 minutes or until chicken is done. Enjoy!

I love cooking ahead!

I grilled chicken for ceasar salads rhis week.

Cleaned out the freezer:
grilled smoked sausage ( high salt )
ham grillers ( high salt)
12 burgers
BBQ ribs
just wanted to get rid of them!

sauteed mushrooms
made chicken muffins ( don't like them won't make them again )
boiled some eggs

Thats it for today. That wasn't on my list but trying to make room for things that ARE on my list!
