Lunches???
Hi everyone, I'm new here and just beginning my low carb journey. I'm not sure if this is the correct board to post this on (you all have so many boards!). I can figure out breakfasts and dinners, but lunches are so hard for me. Right now my hubby is taking a sandwich, chips and a candy bar to lunch---I know BAD!!!! Both of us work and I'm having a hard time with figuring out lunches, I really don't have much time to make salads in the morning and hubby needs something filling, he is a big guy with a big appetite. Can anyone help?

i make salads the night before and I dont add the dressing until that day. My salads are different though. I add everything under the sun lol meat, maybe hardboiled eggs, cheese, chopped olives green and black, ham, turkey, oh gosh there isnt anything I wouldnt eat on top of lettuce with a good dressing.
Other then that I can think of left over dinner no?![]() |

You can make roll ups, from deli meat & cheese. Sometimes I'll put a dill pickle in the middle, or will wrap a lettuce leaf around it. You can add whatever veggies you like, mayo, mustard, etc. Basically, a sandwich without the bread!
Sliced cucumber, green pepper, zucchini,celery, whatever allowed veggies you like with ranch dip. Cheese cubes. Maybe a prepackaged sugar free jello for desert. All can be prepared in advance, and can be ready when you are. Hope that helps! It really does get easier as you go along. |

If you have access to a microwave at your jobs, you can take just about anything, esp. leftovers from dinner.
If not, Walmart has great thermos type containers that will hold a pint or so for around $4. For these, you can make up stews or soups or even casseroles and just nuke them and put them in the thermos--they will stay warm for a few hours. If you don't have access to a fridge, it's worth investing in a small type cooler and some freezer paks, then you can keep cheese and meats and veggies cold. For salads, I just put everything in individual containers ahead of time, even the night before. Then I pack them all in a cooler and use those little containers you get at the dollar stores for salad dressing. The kind that the lids snap closed on real well, or even the baby food saver types. For quick lunches, I make ham and cheese roll ups, cheese sticks, buy already sliced veggies and ranch dip, salad fixins, leftover fried chicken (I don't mind it cold), sliced deli meats, pickles, olives, stuffed celery sticks, mostly stuff like that. For better lunches, I generally have stuff I freeze in single serving size containers and I take that and nuke it and add some veggies. They have these great fast pouch (not sure of the name-maybe birdseye) frozen veggies now. They come in single size containers like broccoli and cheese or green beans, etc. and you put the entire bag or container in the microwave and they don't taste bad either--saves a lot of time. Great ideas! Thanks! And yes, I have a fridge and a microwave at work. I bought some celery and cream cheese today, so tomorrow for lunch I'm having some turkey lunch meat, a slice of white cheddar cheese and celery with cream cheese and for dessert a no sugar cup of strawberry jello! Sounds pretty yummy!
And I'll definitely take a salad once in a while and although I tend to get tired of salads kind of easily. |
